A bit cheffy I know, but I couldn't help myself 😂. With all the healthy food I eat, I have one major weakness (and it's not chocolate) - it's cheese 🧀! One of my favourite dishes is a goats cheese and caramelised red onion tart, but of course the proper version (all butter shortcrust and masses of goats cheese) is a real treat! So I've tried to do a healthy twist on this (and at the same time using those gorgeous caramelised onions I have sitting in my fridge).
I made a quick dough using quinoa flour, wholemeal flour, flaxseed, egg and water, and rolled it and popped it into little tart cases and baked them blind. And then simply filled with my onions, topped with some creamy goats cheese and some fresh thyme from the garden. Along with some chargrilled asparagus, this was so tasty. My lovely friend @drashvybhardwaj reminded me about how good onions are for you - they are rich in vitamins, they've been used in ancient medicine forever and they taste 👌👌👌
My diet doesn't exclude anything. I eat pretty much everything and anything, but I try and do so in moderation (except when it comes to vegetables where I go crazy as you know)!!! What's your weakness when it comes to food?
