Chicken and shrimp Cauliflower “Fried Rice” drizzled with sriracha mayo 🍚 🍤 🥡I was cooking this and my 12 year old son walked in the kitchen and he was like oooh is that for me? He thought it was regular fried rice, so he didn’t think it was my dinner. He tried some and he said it was really delicious, he couldn’t even tell I used cauliflower. This dish was so flavorful, I was not missing the white rice at all. That is huge for me to say since I’m Asian 🤣
I did not follow a recipe, I literally just threw everything in the pan and used my usual Asian cooking condiments. I used frozen riced cauliflower I purchased from Aldi. I started out by coating the pan with olive oil, then I added fresh garlic, shrimp, red bell peppers, salt and pepper. Took the shrimp out and put aside, scrambled up eggs in the same pan with more olive oil. I added the cooked riced cauliflower, salt, pepper, chili paste, liquid aminos, sesame oil and stirred everything up. I put the shrimp back in the pan, added shredded rotisserie chicken, and green onions. Sprinkled some toasted sesame seeds on top and that was it. This took up no time at all to cook. In less than 20 minutes, I had delicious fried rice that tasted way better than a Chinese takeout.
