Feeling fancy? We’ve got the salad for you. Watercress, fig, candied walnuts, gorgonzola salad with honey. Bon apetite! Here’s what you’ll need:
1 head red leaf or Romaine lettuce
1 cup torn fresh spinach
1 cup watercress
1 cup figs (dried are fine)
1/4 cup candied walnuts
1/3 cup grumbled gorgonzola
1/4 cup fresh bacon bits (not from a can) *optional
For the Champagne Vinaigrette
1/4 cup Champagne vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
2 tablespoons white wine (I used Pinot Grigio)
Zest from 1 Meyer lemon
Juice from 2 Meyer lemons
1 tablespoon orange juice
1 tablespoon finely chopped shallot
1/4 teaspoon garlic paste
1/2 teaspoon salt
1/8 teaspoon black pepper
3/4 cup extra virgin olive oil
Place all ingredients except oil into a blender and mix for about 30 seconds.
While the blender is still running, slowly add the oil in a
steady stream to emulsify.
Put dressing in sealable jar or bottle in the
refrigerator until ready to use.
Prepare salad, shake dressing well, pour, and lightly toss. Serve immediately.
