“If people need to be told how much salt to add to the water when they boil pasta, they shouldn’t be reading this book. When I say, for instance, 2 lbs of cockles, I can’t tell you how many cockles that will be because it will depend on the size of the cockles you have. Haida Gwaii cockles tend to be big but there are over 200 species of cockles on the planet, and some will be smaller than ours. When I said “a leg roast of venison,” it is hard to say “a 3 lb leg” because when you go out to shoot a deer you don’t know how big his legs are going to be. If you gather bladderwrack to steam your mussels in a pot, I ask you to rely on common sense when it comes to quantities. Obviously a wheelbarrow full would be too much, a coffee mug not enough.”
