Tucked away off the beaten path, not far (but still another world away) from the tourist group mobbed Piazza Duomo, lies a family run #trattoria that has been cooking no-frills Tuscan comfort food since 1963. Nestled in the Oltrano neighborhood, at the corner of Piazza Santo Spirito and Via Maggio, Trattoria La Casalinga (Literally "The Housewife") serves insanely simple, yet soul-satisfying dishes that top out at around €12 for meats, and €9 for pasta. Sure you can splurge for a classic Bistecca Fiorentina, but look around the tables at lunch and you will see the (almost exclusively) blue collar local crowd drinking table wine (after all, this is Italy) and dining on much simpler fare like homemade rabbit filled #tortellini , #spaghettigenovese , sautéed #calvesliver with sage, and #vitello lemoné. With pricing and food this good, and a kitchen overseen by #nonna herself, it's no wonder this neighborhood gem fills up quickly.

One of the very finest calves livers I've had the honour of slicing up! A whole 100% full blood Wagyu liver (36 months) from @pao_mares of Wagyu de Campo Libre, Durango. I'll be grilling the slices rare with some mash and cabbage, and also sneaking a few slithers into my bubbling bolognese (I tend to always add liver to any meat ragú because I'm such an offal fan). Whilst a whole liver can seem intimidating (especially from larger animals), they're incredibly easy to prepare and use. You can of course always ask your butcher to do it for you the thickness you want, too. Unlike the Japanese who favour a super intensive fattening period for their Wagyu, at Wagyu de Campo Libre in Durango they're totally free range and mainly grass fed (supplemented with a mix of dried grasses and other grains during the dry season), and as a result the flavour is spectacular.
P.S a note on membrane - depending how tough it is, you can just peel or slice it off, either once you've sliced up the liver or before whilst it's still whole (peel it from one end - slip a sharp knife between membrane and the liver if you can't get hold of it). Though if it's super thin I sometimes just leave it on.... I know, lazy 🙈
