Our best wine of the honeymoon so far. Got the last bottle from this very cool enoteca in Parma. Rare, traditional producer - quite expensive but since we're on honeymoon, why the heck not?
The wine had evolved beautifully and was definitely ready. No need to air in a decanter. Complex tertiary notes of tapenade, sun-dried tomatoes, meat jus, dried porcini and summer truffles. Also some dried spices like cinnamon and clove, which became more exotic as the wine gained access to oxygen. Still, there was more than a whisper of sweet dried cherries and prunes. Medium + bodied, and plenty of very fine tannin and lovely fresh acidity. The wine is hardly fragile, but everything feels evolved and in harmony. Finishes long, with notes of pipe tobacco, thick dark plum skins and smoke.
An extraordinary wine and definitely an experience in itself.
