Decided to grab lunch before grocery shopping at the (awesome) new @365bywholefoods and was happily surprised to find @nextlevelburger! And then proceeded to have THE most delicious burger. They have tons of options, including a gluten-free burger (what I’m holding). 👍💪🏼😊😍 can’t wait to go back!

Ingredients & directions for kimchi pancake: 1 cup kimchi chopped, 2tbs kimchi juice, 1/2 cup flour (gf like chick pea or wheat - no difference in this recipe), 1/4 tsp salt, 1/4tsp sugar (optional), 4 scallions or 1/4 cup chopped onion, 2tbs water. .
Directions: Chop kimchi & onion & put in mixing bowl. Add flour, salt, sugar, & water & stir. If pan frying, heat pan, add desired amount of oil and cook about 10-12 minutes each side depending on size. Serve with dipping sauce (soy sauce, vinegar, oil) or sour cream. This recipe makes 2 10"pancakes or about 6 smaller ones. .

Modifications: Many recipes call for egg so you can use egg or vegan egg but you don't have to. You can also add other fresh veggies which makes it slightly less spicy. Fresh green cabbage, sweet red pepper strips & carrot shaves/strips work great. You can also add a lot more scallion. The flavor can also be easily modified depending on the type of oil such as coconut or sesame. The health factor can be taken up by baking this pancake or pan frying with a spray or olive oil &/or using a little less flour. However sometimes you need a little grease so pan frying the pancake in >3tbs of oil gets that job done. .

Eating vegan does not always mean eating healthy, and I’ve definitely found myself slipping down rabbit hole of vegan junk food. My new focus is to shift to eating mostly #wholefoods so I made sweet potato avocado “toast” for the first time today! It tastes awesome, I feel great after eating it, and it’s pretty!! 🥑🍠🤗
