🍅For #mealprepsunday I made a keto chicken bacon ranch with broccoli!! I couldn't resist a few bites from the smell and my husband and father in law even tried it and liked it!

2 tablespoons butter
1 1/2 tablespoons Homemade Ranch seasoning mix(I used store bought)
4 ounces cream cheese, softened to room temperature
1/4 cup heavy cream
2/3 cup reduced sodium chicken broth
1/4 cup crumbled cooked bacon
1/2 cup shredded cheese
10.8 ounce frozen broccoli florets or about 4 cups broccoli
2 cups shredded cooked chicken
1 1/2 cups shredded cheese
1/2 cup crumbled cooked bacon

Preheat oven to 350 degrees F.
In an oven-safe skillet, melt butter over medium heat. Reduce heat to medium-low and add Ranch seasoning, cream cheese, heavy cream, broth, crumbled bacon, and cheese. Whisk to combine and cook sauce for about 5 minutes. Meanwhile, steam the broccoli.
Stir the broccoli and shredded chicken into the sauce mixture. Sprinkle 1 1/2 cups shredded cheese and 1/2 cup crumbled bacon over top.
Cook in oven for about 20 minutes, until bubbly throughout and cheese is melted. Then move to top oven rack and broil for 2-3 minutes, if desired. Serve warm.

🍱This broccoli cheddar bacon salad is on my meal wish list for next weeks meal prep! Looks super easy to make!

1 bunch fresh broccoli , cut in small pieces
3/4 cup mayonnaise
2 Tablespoons apple cider vinegar
3 stevia packets
6 slices no sugar bacon , cooked crisp then chopped
1/2 cup cheddar cheese , grated
1/4 cup onion , chopped (optional)
1/4 cup roasted sunflower seeds (optional)

Lightly steam broccoli for a minute or two. Drain and cool.
In a large bowl, mix the mayonnaise, vinegar and stevia with a whisk.
Toss the broccoli and cheddar cheese into the dressing

🍱This is another broccoli recipe I loved and had made in last weeks meal prep. It lasted me 4 suppers from making in a smaller bread pan since I am making sperate meals for myself and my family I use smaller pans.🍱
How to:
4-5 small bunches fresh broccoli cut into bite size Approx: 4-6 cups
1/2 cup mayo
1/2 cup sour cream
6-8 Slices bacon cooked and cut into bite size pieces
1 Bag Shredded Cheddar Jack Cheese (about two cups)
3-4 tbs fresh chives chopped 🍱Instructions
Steam or Boil Broccoli Pieces ( I boiled for 10 minutes)
Drain and Let cool
Mix together Mayonnaise, Sour Cream, 1 cup of the Shredded Cheese and half of cut up Bacon, and placed in baking dish- over broccoli - that was lightly sprayed with non stick spray.
Top with remaining cheese and bacon pieces.
Cook in oven 400° for 10- 15 minutes until cheese is melted
Top with chopped Chives and serve!

🍱I just made these broccoli fritters for this weeks meal prep and to use up my leftover broccoli I wanted a yummy new recipe and these are Sooo good!!! Ive been pairing them with our grill outs to dip in my big mac keto sauce like chips & dip!🍱 ➡➡➡how to because girl you got to try it!!
8 ounces broccoli, cut into small pieces or chopped
1 cup shredded cheddar cheese
2 large eggs, beaten
2 Tbsp oat fiber or almond flour (regular flour if not low carb)
1 tsp Cajun seasoning
🍅Cut fresh broccoli crowns and stems into 1/2 inch by 1/2 inch pieces. Steam lightly in the microwave or in a steamer. Drain any excess water and dry with paper towels if wet. (If using leftover broccoli, drain well and chop into small bite-sized pieces.)
-Toss or stir the broccoli with your flour of choice and the Cajun seasoning to coat. Add the egg and stir. Add the cheddar cheese and stir until thoroughly combined.
-Place a cast iron or non-stick pan over medium heat until hot. Add the oil and swirl to coat the pan. A non stick pan needs less oil. Visually divide the mixture into fourths and spoon into the pan, arranging in a low mound or patty. Scrape any tumbled pieces back into the piles. 
Cook on one side until the cheese on the top of the patty begins to melt and the bottom is crusty brown, about 2-3 minutes. Flip and cook on the other side until browned.
Makes 4 large patties, 2.8 NC each. Serve topped with an egg or with a dipping sauce(for me it made about 8 smaller ones which I prefer!)
