Broccoli fritters for the win!!! Thanks to @lezbi_keto for sharing their recipe! They were easy to make and everyone in the fam loved these yummy little green balls of goodness! I used a cookie dough scooper to make sure I put the correct amount of goods in the oil. This is 2 eggs, 8oz chopped broccoli, 1 cup cheddar, 2 tbsp almond flour mixed and dropped in olive oil or avocado oil. I dashed in garlic powder and salt. Hope you give these a try! Yum! 😘

Cheesy Baked Broccoli Chicken Fritters

Ingredients:
1 medium onion (diced small)
1 Tbsp coconut oil
2 cloves garlic (minced fine)
1 lb chopped frozen broccoli (thawed)
1 large can of chicken (drained)
2 eggs (beaten)
1 1/2 cups shredded cheddar cheese
1 cup flaxseed meal
1/2 cup hemp hearts
1/4 cup parsley flakes
Salt and pepper to taste

Preheat oven 400 F. Prepare cookie sheet with parchment paper. Set aside. Heat oil in skillet. Add in onion. Sauté until translucent or 5-7 minutes. Add in garlic and sauté 1 minute. Don't overcook garlic. Removed from heat and allow to cool. In a large mixing bowl, add in chopped broccoli and mash with potato masher. Add in onion/garlic mixture and remaining ingredients. Combine well. Spoon and form individual patties 2-3 inches onto parchment paper. Bake 15 minutes. Take them out and flip patties. Allow to bake 10 more minutes or until they turn golden brown. Serve with homemade ranch dressing. Can be frozen too to be served later.

Perfect for game day and sneaking veggies into your kids diets!!!! PLUS it’s LOW CARB BABY!!!

Ingredients
.
8 ounces broccoli, cut into small pieces or chopped
.
1 cup shredded cheddar cheese
.
2 large eggs, beaten
.
2 Tbsp oat fiber or almond flour (regular flour if not low carb)
.
1 tsp Cajun seasoning
.
1 Tbsp avocado oil or your favorite
.
Instructions
.
Preparation:
.
Cut fresh broccoli crowns and stems into 1/2 inch by 1/2 inch pieces. Steam lightly in the microwave or in a steamer. Drain any excess water and dry with paper towels if wet. (If using leftover broccoli, drain well and chop into small bite-sized pieces.)

Method:
.
Toss or stir the broccoli with your flour of choice and the Cajun seasoning to coat. Add the egg and stir. Add the cheddar cheese and stir until thoroughly combined.
.
Cook:
.
Place a cast iron or non-stick pan over medium heat until hot. Add the oil and swirl to coat the pan. A non stick pan needs less oil. Visually divide the mixture into fourths and spoon into the pan, arranging in a low mound or patty. Scrape any tumbled pieces back into the piles.
.
Cook on one side until the cheese on the top of the patty begins to melt and the bottom is crusty brown, about 2-3 minutes. Flip and cook on the other side until browned.
.
Makes 4 large patties. Serve topped with an egg or with a dipping sauce.

Ingredientes:
1 Cabeza grande de brócoli (alrededor de 3 tazas procesadas)
1/2 taza de cebolla picada.
1/4 taza de cilantro picado.
2 dientes de ajo.
1/2 taza de harina de garbanzo o avena.
2 cucharadas de linaza molida.
1/2 cucharadita de comino molido.
1/4 cucharadita de pimienta de cayena (opcional)
1 cucharadita de sal marina.
1 cucharadita de pimienta molida.
1 clara de un huevo grande. (Si eres vegano usa la clara del agua de chía activada)
1 cucharada de aceite de coco o más para cocinar.
Procedimiento:
1) Coloque los brotes de brócoli en un proceso de alimentos y desmenuce.
2) Luego, agregue la cebolla, el cilantro y el ajo en el procesador de alimentos y procese hasta que todos los ingredientes estén integrados y desmenuzados (se ve como granos de arroz). Transfiera a un tazón grande.
3) Agregue la harina de garbanzo o de avena, la linaza molida, el comino, la pimienta de cayena y la sal. Mezcle bien y apriete como si estuvieras formando una masa.
4) Caliente el aceite en un medio en una sartén grande. Forme la hamburguesitas de aproximadamente 1/4 de taza, coloquelos en el sartén, reduzca el fuego a bajo y cocine los buñuelos en cada lado durante aproximadamente 4 minutos hasta que se doren.
5) Estos son ligeramente fritos y no fritos. Lo que hago es cubrir el sartén después de que las gire para asegurarme de que las hamburguesitas estén bien cocidos en el medio.
6) Deliciosos, servido con guacamole y ensalada verde (sólo una sugerencia).

Ingredients:
1 big head broccoli florets (about 3 cups processed)
1/2 cup onion, chopped
1/4 cup chopped cilantro
2 cloves garlic.
1/2 cup Chickpea Flour or oat flour.
2 tablespoons ground flaxseed.
1/2 teaspoon Ground Cumin.
1/4 teaspoon cayenne pepper (optional)
1 teaspoon sea salt.
1 teaspoon ground pepper. (if you don't use cayenne pepper).
