These [vegan + gf] pancakes have been on serious repeat lately and they couldn’t be easier! 🥞

Do it👇🏽
• In a blender combine 1 1/4 cups gf oats, 1/2 cup applesauce, 2 tbsps lemon juice, 1 tsp maple syrup, 1/2 cup non-dairy milk, 1 tsp baking powder, 1 tsp baking soda + 1 tsp vanilla
• Blend until combined and smooth. In a heated skillet on medium-high heat, melt a bit of coconut oil or ghee and cook pancakes for a few minutes, flip and cook until golden on both sides. This recipe will make enough for about 3-4 people!

Topped with nut butter, blueberries, banana, macadamia nuts (cause I’m feeling’ fancy...) and hemp seeds

🥥Coconut Rice 🍚

Found this little gem in Kuala Lumpur: @vcrlovesyou. We were lucky because it was right around the corner from where we stayed. So we practically ate our way through their whole menu in 3 days. They’re meals are very special and you can definitely taste a difference to the usual egg on toast. Especially their french toast was mind blowing. Really! But (un)fortunately it was gone before I could even take a picture. 😄 What’s the yummiest thing you’ve eaten this week?

"Date Pancakes"
It's Friday, which means there should be a dessert treat and yes!!! We all love pancakes. So what's better than treating yourself with Date Pancakes!!!❤

Here's the recipe......
Ingredients :
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- a pinch of salt
- 1 cup pitted dates
- 1 tablespoon vegetable oil
- 1/2 cup milk (depends on which milk
you prefer or like)
- 1 egg
Other Ingredient :
- vegetable oil or cooking spray ( to grease the pan)

Instructions :
- Add milk, vanilla extract and dates in a blender. Blend it until it becomes a smooth mixture.
- Add all purpose flour, baking powder and egg in a bowl and mix well.
- Pour blended smooth mixture and vegetable oil into the same bowl and combine well with the help of whisk.
- Place a pan over medium heat and grease it with oil or cooking spray.
- Pour a large spoonful of pancake mixture into the pan.
- Let the bottom side turn golden brown in color and then flip it and cook the other side.
- Transfer the cooked pancakes into a plate and enjoy.
P.s. :
1. Do not turn flame too high.
2. If you do not like to add egg in pancakes then you can also skip it, follow the other ingredients, you will still have delicious pancakes.

Yay it’s Friday!! 2 slices of bread (we used sourdough)
50g cream cheese
1 tsp Bioglan Superfoods Spirulina.

Method:
Add the cream cheese to a bowl and stir in the spirulina to create a marbled effect.
Toast the bread.
Spread the cream cheese mix onto the toast and enjoy!

It's Fri-Yay! 🙌🏼💙 I've spent my whole morning getting ready for a crazy weekend with friends 😅 Our university's annual ball is coming up this Saturday and I don't really have a whole outfit yet 🙃 But I'm getting there! Running will have to stand back this weekend, but come next week, I'll be right back at it 💪🏼One last long run on the schedule today, let's see how that goes 😅❄️
