Before I got sick this year, I was afraid of my dreams. Afraid of the failure that might come with them. Not anymore. Getting sick was the biggest want up call to me. That I could either spend my life afraid of it or actually living. And that, the things I wanted had to come from outside of my comfort zones. 💛true story... the first time i made my husband eggs, it was a complete fail-- he told me they tasted like "Palmolive." i guess i didn't wash all the soap out of the pan?! oops🤦🏻♀️ . 💛flash forward years later i think i make pretty good 🥚 whether scrambled or like this little muffin omelets! recipe ⬇️ . 🍽preheat oven to 350. beat 8 eggs in a bowl. add salt and pepper to taste and 2 tbsp milk. grease muffin tins with olive oil spray. add spinach, chopped peppers, onions, tomatoes- i also added a tsp of cooked quinoa to a few muffin tins. top with grated 🧀. add egg mixture and bake for 18-20 minutes. cool and refrigerate or freeze for future quick breakfasts! . #themommyandmerd#breakfast#balance#familyfood#realfood#wellness#rdapproved#rdmom#registereddietitian
