100% Wholemeal Sourdough
2hrs layer the dough is very soft with a very pronounced acid flavour.
There is still plenty of gluten strength to form a crust, but not enough to create a chewy crumb.
The idea now is that the crust will keep its strength to enable it to rise sufficiently to give a nice soft crumb, but also have a very strong acid flavour in only a few hours of ambient proving 🤔

Keading and developing the gluten in the 100% Wholemeal Sourdough.
Temperature is rising nicely in the bakehouse right now and the stiff levain was really well fermented and had loads of really high citrus flavour.
Noticing how the dough comes off the bench and feels when picked up to indicate the gluten development.
There will be a further 3 fold during a 2 hr bulk at about 27C which will further strengthen the luten and open out the crumb. Then about a further 3 hr proof before baking 👍
Hydro about 85% for anyone who cares 😉
