Baked wild salmon with lemon juice and black pepper, new potatoes drizzled with olive oil and steamed kale, spring greens and mange tout with lemon and black pepper.
It took less than 5 minutes to prepare and less than 20 minutes to cook, savouring the natural flavours of the ingredients, only enhancing them with some olive oil, lemon juice and black pepper. Nothing else! I sometimes add just a splash of soy sauce in place of the lemon to add a little bit more flavour.
Brassicas (such as kale and spring greens) 🥦 are packed full of vitamin C, folate, potential cancer preventing phytochemicals and calcium.
Salmon is a great source of protein, anti inflammatory omega 3 fatty acids and heart healthy B vitamins 💪🏻.
