๐Ÿฒ๐ŸฅœQuick & Easy Peanut Stir Fry๐Ÿฅœ๐Ÿฒ

This is a go to meal for me. It's super flavorful, clean, and if you have leftover meat and rice it takes only 5 mins to wip up. Goes great with chicken, shrimp, and beef as well.

Ingredients for Stir Fry:
- 4oz 99% lean ground turkey (or choice of meat)
- 3/4 cup jasmine rice
- 1 1/2 cups premixed frozen stir fry veggies
- 4 chopped up mushrooms
- 2tbsp peanuts

Ingredients for Sauce:
- 1 tsp sesame oil (or olive oil but changes flavor)
- 1 tbsp spicy mustard
- 1 tsp agave or honey
- 2 tbsp low sodium soy sauce
- 1 tbsp minced garlic (or garlic powder)
- 1 tbsp minced ginger (or dash of ginger powder)
- 1 tsp red pepper flakes
- 1/4 tsp xanthan gum, arrowroot starch or cornstarch (*optional: helps thicken sauce)
- 1 tbsp PB2 powdered peanut butter or melted peanut putter (*optional)

Instructions:
1๏ธโƒฃ Cook up your rice and meat based on instructions on package. I prefer to prep large batches of rice in a rice cooker, and also cook the meat ahead of time and keep them both in the fridge to use throughout the week.

2๏ธโƒฃ Mix up ingredients for your stir fry sauce and set aside.

2๏ธโƒฃ Heat up a pan and sautรฉ your veggies in some olive oil spray or PAM. Season with salt and pepper.

3๏ธโƒฃ Add all your cooked ingredients to a bowl then top with the sauce! That's it๐Ÿ‘
