Così la mia colazione si è rivestita di semplicità senza cadere però nel semplicismo, due cose veramente diverse. I tempi cambiano, mille nuove ricette spuntano, ma la sostanza è sempre la stessa. E così che oggi ho deciso di apprezzare il vero gusto della semplicità! Chickpea Scramble Breakfast for Two!🌱💕 Make this #veganbreakfast 4 U you and your bae this weekend! You'll definitely earn points! 👅😏
Makes 2 servings
🌵Grated Potato Pancake:
263g white potatoes (1 1/3 cup grated)
3/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp paprika salt+pepper to taste
1 tbsp vegetable broth .
1 can chickpeas (15oz format)
1 tbsp grape seed oil
2 tsp nutritional yeast
1 tsp onion powder
1/4 tsp garlic powder
1/4 tsp turmeric
1/4 tsp salt
1/4 tsp pepper
1 tbsp vegetable broth
6 cups (170g) baby spinach
1 cup (98g) mushrooms
1 cup (145g) grape tomatoes 👇Instructions: 👇
🌵For the grated potato pancake:
1. Grate potatoes and transfer to a bowl. Add the spices and stir to combine.
2. Heat a skillet on medium-low heat, stir in the potatoes and form a pancake shape with a wooden spoon. Make sure to pack it in and press with the back of the spoon.
3. Let cook until the bottom as browned. It will look like it’s sticking to the pan but do not worry.
4. Once the bottom of the potato pancake is browned, about 10 minutes, stir in the vegetable broth. The pancake will unstick.
5. Carefully flip the potato pancake upside down. Brown on the other side, another 5-10 minutes. Split in two portions and set aside. .
🌿For the scramble:
1. Combine the cooked+ rinsed chickpeas to a heated skillet (med-low heat) with the grape seed oil. Stir to evenly coat the chickpeas.
2. Add in the seasonings and stir to combine.
3. Mash about half of the chickpeas with a potato masher in the pan (optional). 4. Stir in the vegetable broth and cook for another 2 minutes. Set aside. .
☘️For the other components:
1. Wilt baby spinach in a pan on low heat, mixing often and adding a bit of water as need. Split in two portions and set aside.
2. For the mushrooms, sauté in a pan until browned on both sides.
3. For the tomatoes, roast in the oven at 425 for 10 minutes or cook in a skillet until soften. .
🌴To Serve:
Serve all together.
