A long time ago, in a far away land called Philadelphia, @chef_al_paris turned me on to the book "The Physiology of Taste". Brillat-Savarin talked about Poulet de Bresse as "the queen of poultry, the poultry of kings". I always wanted to try this crazy blue footed chicken from France, but never had the chance. Now, Mark & Myriam @devilsgulchranch are raising their own and they are from the true breed stock only found in Eastern France. Only difference is no Epinette treatment, so they're much more humane. I'm lucky to work with such a product and have a relationship with these great ranchers. We're roasting them whole and we only get a few per week. This chicken is no joke.
