Here is a delicious vegan cheesecake which I made a while ago, you can find a very similar recipe on my blog, direct link is in my bio @elavegan 💙 The only difference was that I colored the top layer with 2 tbsp of the blue powder from @matcha.blue which is completely natural btw 💙 You can use my coupon code elavegan for a 10% discount in case you want to order it.

Hallöchen ihr Lieben, vor Kurzem habe ich diesen veganen Käsekuchen gemacht. Das Rezept für einen sehr ähnlichen Käsekuchen findet ihr auf meinem Blog. Super simple Jam recipe
Cherry Chia Jam
1 1/2 cups of cherries
1/2 a cup of chia seeds
1/4 of a cup of lemon juice
1/4 -1/3 cup of water (or more)
1 1/2 tbsp of Chaga @rootandbones
1 tsp of cinnamon .

Directions
1) add all ingredients into a pot, boil/mash down until desired consistency. Add maple syrup for a little extra sweetness. (I did not add maple syrup)

Blueberry cupcake 😋 along with this illustration I thought I would share my favourite blueberry muffins recipe 💜
Blueberry Muffins:
1 large egg, lightly beaten
1 cup plain yogurt
1/3 cup vegetable oil
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/2 cup granulated white sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 - 1 1/2 cups fresh or frozen blueberries
Instructions: Preheat oven to 375 degrees F (190 degrees C). Position rack in center of oven. Butter or line 12 muffin cups with paper liners.
In a large bowl whisk together the lightly beaten egg, yogurt, oil, and vanilla extract.
In another large bowl whisk the flour with the sugar, baking powder, baking soda, and salt. Gently stir in the blueberries. With a rubber spatula fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined and moistened. (The batter will be thick.)
Evenly fill the muffin cups with the batter, using two spoons or an ice cream scoop. Place in the oven and bake for about 15 - 20 minutes or until a toothpick inserted in the center of a muffin just comes out clean. Transfer to a wire rack and let cool for about 10 minutes before removing from pan. " recipe from joyofbaking.com "

Yesterday's (almost) successful macro day. My macro coach figured out I entered an ingredient wrong on my banana bread recipe so when I fixed it, at the end of the day, my macros were higher then normal. I didn't stress, just laughed! A quick shout out to Amber with @biceps.after.babies, she is awesome! She has been so quick to answer all my texts and she isn't demeaning at all when I ask questions. Late last night she logged into my MFP app for me to help me figure out why my macros were so skewed while I was meal planning. She was able to pin-point to one ingredient in a recipe!!! She also taught me this cool tip; when entering an ingredient you don't have a label for type "usda& #34; after the food. Anyways, back to my almost successful macro day.
1. The culprit banana bread and five egg whites. This was the reasoning for my skewed macros, I entered a generic flour that had no macro counts. But in regards to this banana bread can I just say dang @leahsplate! This was so good! I planned it in for today and tomorrow since one day was just not enough. Thank you for sharing your awesome recipes.
2. A big bowl of blueberries.
3. A large veggie salad that included tomatoes, bell pepper and cucumber topped with lite Olive Garden dressing. Some carrots and pan seared chicken bites on the side.
4. A smoothie topped with granola and a side of egg whites.
5. The recipe for these super tasty enchiladas verde was found @skinnytaste and I highly recommend them. We had leftovers and can I just say I love left overs?!?!?! I already have the recipe in my app so all I have to do is weigh out an amount, stick it in a Tupperware and bada-boom, bada-bang I've got lunch for tomorrow!
6. Two servings of @halotop oatmeal cookie ice cream. This is my favorite flavor. It's got little pieces of oatmeal in it and a hint of cinnamon. Pretty dang good!
