Kale Beet Salad
1 large beet (steamed)
2 Tablespoons olive oil
1 1/2 Tablespoons apple cider vinegar
1 Teaspoon raw honey
Salt and pepper to taste
4 Cups chopped kale
3 Tablespoons crumbled goat cheese
2 Tablespoons chopped walnuts
2 Tablespoons pomegranate seeds
1. Spiralize beet and set aside. In a small bowl, add olive oil, apple cider vinegar, honey, salt and pepper. Whisk until combined.
2. In a large bowl, add chopped kale and dressing. Toss for a minute or two ( until kale is slightly softened)
3. In a serving bowl, add kale and all remaining ingredients.
