Got to interview this stud yesterday for @drloshow! @fit2fat2fit For those of you who don't know Drew Manning, this man as an experiment gained 75 lb in 6 months so he could really understand the struggles of his fitness clients. Then he shared his journey and struggles back to being fit again. It's such an inspiring story. Well here it is....my first shot at making my own homemade nut milk.

Let me say, it was SOO easy that I was blown away, truly, I was amazed at how easy and delicious this was, it even got the stamp of approval from Kyle, in his coffee!! Yummy! <3

Now, for the EASY PEASY recipe for Cashew Milk:

1. Soak 1 Cup of Raw Cashews for 4 hours or overnight

2. Rinse them until the water runs clear

3. Add the cashews & 2 cups of water to your blender, blend for 2 minutes on medium speed and one minute on high. This works best in a high powered blender like a Vitamix. You want it to be very smooth and not grainy or chunky.

4. Add in 2 more cups water, and other ingredients to taste. Some ideas:

Vanilla Extract, Sea Salt, Cinnamon, Cardamom, Honey, Agave, Natural Maple Syrup, Liquid Stevia, Your choice!

5. Blend for another 30-60 seconds to combine all ingredients

6. Store in an airtight container in the fridge and use within 5 days, I put the date on the container/jar, just to be safe :) Let me know if you give it a try & if you have any other healthy food swaps you use, or would like to see more of.

Lunches for the week in the crock pot! Hearty, healthy, homemade minestrone soup ♡
The recipe I used calls for the veggies to be sauteed in oil, but I just throw everything (except the oil) into the crock pot and let it cook until the veggies are all tender. You can serve with pasta or rice, but we will have a small sandwich with it instead. This recipe will make 10 servings for lunches. (Probably about 1 cup to 1.5 cups each. If, aftwr it is all cooked, I feel like it needs more volume to make it through the week, I can add some tomato puree or chicken stock to it!) We have this soup a lot in the fall-- when I planned to make it for this week, I didn't expect temps to be in the 80s!! 🤔😓 oh well, it'll still be yummy!

1 1/2 cups cooked chickpeas or black beans
1 cup chopped, fresh, tomatoes
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrot
1 cup cubed zucchini or eggplant
1 cup chopped green bell pepper
I added a bunch of chopped kale to make it heartier
4 - 5 cloves of garlic, minced
2 tsp salt
1/4 tsp black pepper
1 tsp oregano
1 tsp basil
2 cups tomato puree
3 1/2 cups stock or water (I used chicken broth, it's what I had in the pantry!) 3 T dry red wine (I skipped this, today- I don't feel like opening a bottle of wine just for 3 T. It's too hot out to drink red wine lol)
