Black Walnut Tincture. Tinctures are easy, Black Walnuts are not 😂, but the end result will be worth it. The walnuts I used were riper than the ones I grabbed yesterday - maybe a bad thing, but definitely easier to get the hull off. The tincture is antifungal, anti-parasitic , antimicrobial, antiviral, and can protect from nuclear radiation. Also a good source of Vit. C. "Kitchen Room" Black Walnut Maple Imperial Stout is a hefty opaque beast of a beer which delivers a lingering toasty floral black walnut bitterness that coats your tongue, not unlike everyone's favourite legume spread. Made with black walnuts which were foraged by my mother, the chocolate malt was smoked for 12 hours over the discarded walnut shells. Two litres of maple syrup were used to pump this baby to 11% ABV and also acted as a priming sugar. One vanilla bean and 3 pounds of black walnuts went into secondary. Black walnuts. When I first noticed this tree two years ago, I thought it was a crabapple (because those are quite abundant here). Anyhow, I'm hoping for more. We planted the first hundred trees—the ones nearest the road—by hand. With a shovel. I was too young to be of much use, save to hold each whip in place while Mom or Dad filled the dirt back in around it. That was the easy part. Keeping those organic apples and pears alive turned out to be much harder. Scab. Blight. Frost. Draught. Mice and ground squirrels, rabbits and deer. Rose chafers. Tent caterpillars. Yahoos on snowmobiles. In response, we sprayed, watered, and spread manure. Put up an electric fence. Painted and wrapped trunks, pruned and shaped branches. Rented bees that came and went in the dead of night like clandestine lovers. Mowed. With a push mower, natch. Later, we planted six hundred more, employing a tractor and post-hole digger and a few local Amish boys. They took root, then matched and quickly surpassed the first few rows, and we realized we’d been battling another enemy. Juglans nigra—the Eastern Black Walnut. Here in Michigan, they’re often found lining roads both rural and urban. And the dozen or so running across the front of our property—well established long before we arrived—had been poisoning those first hundred trees since day one. The effect was striking, each successive row a little taller, a little less gnarled and sickly the farther you got from the road. From those black walnuts. Eventually, Dad cut those unproductive rows down. The black walnuts, however, remain. Taller than ever. Triumphant. ### I finally got around to taking photos of my first attempt at making nocino, a couple weeks after the fact. I was a little late collecting the green black walnuts, earning myself a nice blood blister cutting them up. I made two 3-liter batches. “The Road More Traveled” is your standard, run-of-the-mill nocino—black walnuts, vodka, clove, cinnamon, lemon, and vanilla. “The Road Less Traveled” is more experimental, reducing the clove, cinnamon, and vanilla; skipping the lemon entirely; and adding anise, roasted chicory root, staghorn sumac, and spruce tips.
