Black & White Cookies
My version of the traditional Black & White cookie. The absolute BEST B&W I ever had was when I lived in Boston but this one will have to do for now. Hope you enjoy!
1.5 cups Almond flour
3/4 cup Coconut Flour
1.5 teaspoons Baking Powder
5 Tablespoons Coconut Oil
½ cup Coconut Milk
1 Chia Egg (directions below)
2-3 tablespoons Maple Syrup
(The white frosting is just melted coconut butter)
Preheat oven to 375F
Place all ingredients in a food processor and blend until dough ball is formed
Scoop out cookies by tablespoon full and place in a cookie sheet lined with parchment paper
Press each cookie to desired thickness.
Bake for 8-10 minutes or until cookies reach desired crispiness
Remove from oven and allow to cool before frosting.
TO MAKE FLAX or CHIA EGG:
For one egg, combine 1 tablespoon of ground flax or grpund chia seed with 3 tablespoons of water. Stir well and place in the fridge for 15 minutes. The mixture will resemble a thick egg substitute after about 15 minutes
2 soft avocados
1/4-1/2 cup cacao powder (can add more if you like)
1-2 tablespoons maple syrup (can use more if you like)
Remove peel and seed from avocado and place green edible part of avocado and remaining ingredients in blender and process until smooth.
