He climbed the culinary ladder going from dishwasher to the Executive Chef at @bistango_irvine restaurant in Irvine. His creations fuse American cuisine with French and European influences, as well as hints from his homeland with dishes like the Yellowfin Tuna Crudo. Montoya never trained in a top culinary school, but learned his skills by working his way up the ladder for the past 30 years. It’s a perfect example of the American Dream!
