Muscle fuel doesn’t have to come in a powder. This “brinner” leverages lean protein and nutrient-rich broccoli rabe and spinach. The kingmaker: a soft-boiled egg you break over the feast.
WHAT YOU’LL NEED
1 tsp olive oil
1 small garlic clove, minced
1 small onion, chopped
1 fresh Italian chicken sausage, sliced
1 cup broccoli rabe
1 cup baby spinach
1. Bring a small pan filled with water to a boil. Adjust the heat to medium. Once the water reaches a strong simmer, carefully add the egg. Cook, gently rolling the egg with a spoon occasionally, about 8 minutes for softboiled. With a slotted spoon, scoop up the egg and transfer it to a bowl to cool.
2. In a large pan on medium, add the oil, garlic, and onion. Cook until the onions are translucent, 3 to 5 minutes. Add the sausage and cook till browned, 7 to 10 minutes. Add the greens and cover the pan. Cook, stirring occasionally, till the greens wilt, 3 to 5 minutes.
3. Plate your sausage and greens. Add the peeled egg, season with salt and pepper.
