Though not the most photogenic version of this dish (leftover, messily thrown together for kid lunch portions and frozen-y raw...but - look at those tomato hats! (More on that later))...it was (and is) super easy and super delicious. I used it to replace one of the Sunday Cook Ups. It is Cacciatore-esque in it's essence, and can be served over anything you please....pasta, rice, Cannellini beans, zoodles, grilled or toasted bread....just to name a few.
Olive Oil + Onions + an embarrassing amount of garlic + canned tomatoes + frozen chicken + frozen tomato hats (if you happen to have bought your canned tomatoes at Costco and had about 842 ounces of said tomatoes left and then poured them into your Texas-sized muffin tins & threw them in your freezer.....I mean....hypothetically....if you were to do that), or just more canned tomatoes on top. Throw herbs on or not, and splash some extra oil over and some salt. Bake at 375....until it's done. This is incredibly forgiving.....I baked mine for almost an hour.
After baking, chop the chicken breasts, add back to your magic oven sauce, plop in 4-6 Tbl butter, add more herbs/salt/etc until it's your version of awesome. My children devoured it. Yours might, too. 💖
