Whenever and wherever I travel, I try to eat local. At my couchsurfing host's home, I had Gundruk ko jhol. Gundruk is fermented and then dried leafy greens like raddish leaves, cauliflower leaves, or Raai saag.
Really fascinated by the taste, I bought a packet of Gundruk from Lal market to take home. I also got some Bhatmas( Soya Beans). Tweaked the recipe a bit and I was ready with my own version of Gundruk Bhatmas ko jhol.

TIMUR (ground Sichuan like pepper)
JIMBU (Himalayan herbs of some kind) Refreshing wt a Mustardy Zing & Slight Chillie burn & a snappy texture... ;
GUNDRUK (Shinki) & BHATMAS Sadeko/ Saag - This is probably considered to be da NATIONAL food of NEPAL & is enjoyed by all da ETHNIC communities of da KINGDOM frm its terai, hills & mountains. GUNDRUK is an ancient traditional NEPALI DISH made out of a FERMENTED LEAFY VEGETABLES. Da leafs are generally frm Mustard green leaves (rayo ko saag), Radish leaves (mula ko saag) & Cauliflower leaves (cauli ko paat). It's put in clay pots for about a week or more to FERMENT, & then SUN-DRIED.
This FERMENTATION process helps in developing very PECULIAR yet PLEASANT SMELL & a TANGY FLAVOR.
It was slightly sour in taste & quite delicious when combined wt da other ingredientsof da dish - milaged wt a DEHYDRATED THINGAMY which's called TITORA. Made frm Beaten Moong which is then dehydrated, along wt NEPALI HEIRLOOM HIGH ALTITUDE STARCHY POTATOES & PLUMP BROWN SOYBEANS - (BHATMAS ).
This hearty Stew is a brothy favorite in da cooler Himalayan Fall & Winter Seasons . . .

Sadheko bhatmas 🔥🔥🔥
This may not look as tempting as traditional sadheko bhatmas but oh it was gooood and super healthy!
A Good source of protein and the good fats. #nepalifood

- In a pan with low heat, toast 1 cup of soya bean nuts until they turn slightly brown.
- Fire roast 1 medium size tomato on your stove 🔥🍅 and let it cool.
- Chop some ginger, garlic, chilies 🌶 and spring onions.
- Transfer everything into a big bowl along with the soya beans.
- Add in some extra virgin olive oil, salt, turmeric and lemon juice 🍋
- Now mash the fire roasted tomato with your hand on the same bowl and mix well.

Bhatmas Sadeko. Also known as "soyabean salsa salad". Traditional Nepali dish, popular in the Newari community. Eaten as a starter or side.
Really makes you chew!
