Today's dish of the day in #CookingwithLilyAunty is Tikkis made with leftover rice.
There's leftover rice in every household and while its stale, some families reuse it by adding water and reheating it. Most chuck it in the bin. When your family is fussy and you're short on time, using leftover rice to make these yummy tikkis is an interesting recipe to use leftover rice.

Dish: Leftover Rice Tikkis
Prep time: 5 minutes Cook Time: 15 minutes Makes: 15 tikkis

Ingredients:
3 cups leftover rice
1/2 finely chopped ginger
2 finely chopped red onions
3 finely chopped green chillies
6-7 chopped curry leaves
1/4 cup finely chopped coriander
1/2 tbsp Mangalorean Bafat Masala
1/2 tsp All Fry Masala
1/2 cup gram flour (besan)
4 tbsp Oil
Water and Salt to taste

Method:
1. In a large bowl mix rice, chopped ginger, onion, green chillies, curry leaves, coriander, bafat masala, all fry masala and mix thoroughly.

2. Add Lily Aunty's Mangalorean Bafat Masala, All Fry Masala and gram flour, salt and mix the mixture thoroughly almost kneading the mixture. Add a little water and knead the mixture thoroughly.

3. Make round balls and flatten them in the shape of round tikkis.

4. Heat oil and once hot, add the tikkis and fry them golden on each side.

5. Serve piping hot with ketchup or coconut/mint chutney.
