Happy Sunday TDD'ers! This morning we bring you a totally indulgent breaky that you need to try at least once. Inspired by a recent visit at a very popular inner city cafe we bring you Ricotta Lemon Poppyseed Hotcake with fresh berries, cream, seeds and maple syrup. $10.75 and $5.37 per serve (serves 2 easily) 1 cup ricotta $2.25 2 free range eggs $0.88 1/3 - 1/2 cup SR flour $0.25 1/8 cup poppyseeds $0.19 Zest 1 lemon $0.51 1/4 cup raw sugar $0.18
Butter for frying $0.24
Mix everything except the ricotta together in a bowl until its smooth(ish) it's a thick batter. Then stir in 3/4 of your ricotta until it's smooth. Add the reserved ricotta but leave it a little chunky so you get delish chunks through your hotcake.
You can make individual little ones or one big one (up to you). Fry these up in a preheated pan in your butter.
I popped a few blueberries in whilst cooking but that's up to you.
