Trying a new recipe and tweaked it a bit for #ThaiRoastedChicken.
2 whole chickens
4 tbsp light soya sauce
1 tbsp fish sauce
2 tbsp brown sugar
1 tbsp sweet sauce
8 tbsp water
40 cloves garlic
2 stalks lemongrass
2 tbsp black pepper corns
2 tbsp coriander seeds
2 fresh coriander roots
Pound garlic, thinly sliced lemongrass, black pepper corns, coriander roots and seeds using a mortar and pestle. You can also blend the ingredients in a food processor.
Pound them until you get a coarse paste. Mix it with the other ingredients.
Rub the marinade on the chickens, making sure the garlic, herbs and soya sauce get into all parts of the chickens.
Cover and leave them in the refrigerator overnight.
Bake in a preheated oven at 175°C for 40 mins, turn over half time.
