Curried red lentil soup with fried slices of courgette and beetroot.
Saute a small shallot and one crushed garlic clove in a little bit of water until soft. Add 1/2 cup of red lentils and grated half a courgette, cook for about 15 mins until the lentils start to break. On another pan, add couple of drops of chilli oil and fry the slices of courgette and beetroot until crispy. Chop some fresh coriander and then sprinkle on top , add the veggie chips and couple pinches of hemp seed hearts. Enjoy!
