Beef and chickpea stew with spinach and carrots from Milk Street: The New Home Cooking by @177milkstreet. The winds have been howling lately and with the dark days and rain coming down all I want to do is curl up with something warm and sit by the fire. This stew hit the spot. Unlike other stews this doesn’t require the meat to be seared. Instead layers flavors build through a dry rub consisting of salt, paprika, cumin, cardamom and cinnamon that gets rubbed all over the beef and then is added to the soup base of onions, butter and tomato paste and water. The thing I loved the most is that this recipe calls for a whole head of garlic to be cooked with the stew and at the end, when the meat is cooked and the garlic is soft, the garlic is squeezed back in giving it a lovely flavor.
