This ones for the fellas, but ladies....listen closely.....It’s my Superfood Omelette 😂🤪 but seriously, Anyone who’s tried has said it’s the best breakfast they’ve ever had! So do it and double tap 😁
May sound a bit faffy but soon as you’ve done your prep, only takes a few minutes. Ok so..... Ingredients:
Salt & pepper
2 x Knobs of butter
Palmful of assorted nuts (I use 3walnuts, 3almonds 3hazelnuts)
1/2 flat mushroom sliced
3 cherry tomatoes, quartered
Handful of spinach
Slice of avocado cut finely
Slice of Parma ham
15g of quality grated cheese
Small bunch of coriander, chopped
Spoon full of Pomegranate seeds
Toast the nuts in a small pan, crush and put aside.
Fry the mushrooms, tomatoes and spinach until soft with butter and again, put aside.
Meanwhile add the remaining butter to another pan and add the eggs (don’t beat them to much, you wanna see the colour dif between yolks and whites). Pushing in the sides of the omelette to create texture, as in the picture.
Then add the mushrooms, tomatoes and spinach, evenly spreading them over just half side of the omelette. Then top with grated cheese, ham, avocado, smashed nuts and coriander.
Onto the other half of the omelette, use a spoon of creme fresh and spread.
Finally, fold you omelette and scatter with pomegranate seeds and a few coriander leaves to make it look fancy! BOOSH!!!! Cook this for someone special in your life, you’ll be sure to impress!!!
