Inaugural cook in the new outdoor kitchen featuring a Tri tip from @redhogbutcher that was marinated over night in lime, garlic, evo, chili powder, cumin, paprika, and ancho chills... reverse seared for the win! Happy hump day!
Achieving the perfect sear on a #steak feels like winning the Super Bowl. By using a reverse-sear method, you ensure that you won't be overcooking that glorious cut in pursuit of a beautiful crust. Slowly bring your meat up to temp by using low or indirect heat. Pull it off the heat when it's within 10 degrees of being done. Rest it while you get a pan or grill surface extremely hot. I like to add smashed garlic, herbs and butter to my pan. Once I place the meat back in, sear it for 45 seconds per side while basting it with the melted garlic butter. You'll stop ordering steaks at restaurants once you master this method. Your Instagram pics won't look bad either 😉
