We've been accused of posting too many pics of our egg breakfast salads but we can't help ourselves... Eggs are SO. FREAKING. GOOD! And good for you, too! Let's break it down:

We're sure you know that pasture-raised eggs provide a high quality protein, but it doesn't stop there! And srsly ppl, don't skip the yolks. The yolk supplies the egg's fat soluble vitamins A, D, E, and K, lecithin, and the carotenoids lutein and zeaxanthin. They also contain iron, calcium, zinc, vitamin B6, folate, and B12.

You lose a lot of the health benefits here with cooking so we like to leave the yolk as runny as possible* (plus it then serves as salad dressing on the greens). We could go on and on... so we will! Eggs also provide vitamin B2, selenium, copper, betaine, choline, and good fats and cholesterol.

Eggs are awesome because they promote heart health, are used to strengthen the blood and increase energy by enhancing digestive and kidney function, help protect your bones, and they are a great food to have as a filling breakfast, although we think you can eat them at any time of day. 😉

I don't always cook for myself, but when I do, it's usually quite simple. Lunch today! Sourdough, avocado, lemon, heirloom tomatoes and two brown butter basted eggs just till the white is cooked through and the yolk still nice and runny.
