Balsamic-glazed pearl onions
Deeply caramelized with balsamico, these onions are sweet, tart and savoury, all at the same time.
I 1/2 cups pearl onions
2 tablespoons unsalted butter
1/2 cup vegetable stock
1/4 cup Olea Europaea balsamico
Sea salt and freshly ground black pepper, to taste
Bring a pot of water to a boil. Add onions and cook for 3 minutes. Drain and rinse with cold water.
In a large pan, melt the butter over medium heat. Add the onions and sauté for one minute. Add the vegetable stock and balsamico to the onions and cover. Increase heat to high and bring the mixture to a boil; cook for 10 minutes. Remove the cover and continue to cook until the sauce is very thick and glossy, approximately 3-5 minutes. Remove from heat and season with sea salt and pepper.
