For the love of food. |
Ok I’m no food blogger nor am I in the habit of taking pretty piccies of food..but when I opened the fridge this morning and saw two sad looking overripe bananas, my near hangry state required some delicious baked banana something to manifest quickly. A google minute later and @kayla_itsines popped up to rescue me with her ‘Healthy banana bread’ recipe.
I have to admit, I start most of my days with coffee and some sort of indulgent treat. Nothing satisfies this baby brain like a sweet sweet sugar hit! But I’m not looking to give into my full blown sugar addiction to get a morning energy hit. So I think I struck gold with this wholesome compromise... After a few hours out of the oven, there is currently half of this banana bread left (can’t blame the baby for this one). It’s that good. Little to know sugar (does maple syrup even count?!), under a cup of flour, and the remaining ingredients are practically making us healthier with each bite. Go on, check it out! Mummas and all of you out there who enjoy melt in your mouth goodness, do yourself a favour and bake this little bundle of heaven! It could just be the start to the day you never knew you needed 😂
p.s I replaced the olive oil with coconut oil, and added cranberries, coconut flakes and linseed for a little extra pizzazz..
