These mini flatbreads happened quite by accident. I sometimes make fritters (actually faux ones since I don't deep fry them but make in my appam/aebleskiver pan) with cottage cheese, chopped onions, pickled jalapenos and cilantro, mixed with some all purpose flour. Did not want to save leftover dough yesterday so added some more flour and yeast and stuck it in the fridge. This morning brought it to room temperature and baked the mini sizes in my toaster oven at 400F. Along with some butter...👌👌😊.
