Finally a nicer meal after a couple of days of basic, busy-time eating: roasted beets, radishes, cucumbers, olives, mint-and-rose-pickled red onions, hazelnuts and feta from the Bäco cookbook. I adapted the recipe slightly, using green tahini sauce in place of poblano-feta dressing, which I’m sure would’ve been great but I had no poblanos on hand. Next time! The green tahini worked really well here, though. Excellent dish with lots of beautiful flavors.

ENGLISH PEA & DILL "HUMMUS"⠀
When I flicked past this recipe in the Baco cookbook, I knew I had to make it. Kurtis loves peas, closely followed by dill, and "things to dip stuff in." This is not a real hummus (thus the quotation marks) because it's not made with chickpeas, but instead uses English peas -- but the tahini, olive oil and lemon juice are still all in there. ⠀

Blanch shelled peas and drain. In a food processor, blend together olive oil and garlic until smooth, then add peas, grated Parmesan cheese, and sesame paste or tahini. When you have a coarse puree, add dill, lemon juice and salt and pulse until mixed through.⠀

I cheated and used frozen peas instead of fresh, and they worked beautifully. The combo of the peas with tahini was different but really worked, especially with the dill and lemon juice to balance the sweetness of each. A worthy twist on the original!⠀

TOMATO-DILL PAPPARDELLE W/ CARAWAY BREAD CRUMBS⠀
This recipe from Baco is representative of many of those in the book: it involves a couple of sub-recipes, and combines some usually-not-found-together flavours. In this case, tomatoes are paired with dill and caraway. ⠀

To make the crumbs, heat butter, olive oil, thyme sprigs, garlic and caraway in a pan. Add bread, toss to coat and toast for a couple of minutes. Bake in the oven with a sprinkling of pecorino, and when cool, crush the croutons into crumbs. To make the sauce, saute red onion, garlic and red pepper flakes in olive oil, add white wine, then crushed tomatoes, sherry vinegar and salt. Simmer until thickened, then stir in dill fronds and torn basil. Serve over pasta, topped with the bread crumbs and more dill. ⠀

The recipe called for making your own pappardelle, which I skipped and used fresh spinach fettuccine instead to make it more manageable. The sauce was good and fresh, although there's more basil than dill, so I'm not sure why dill gets to headline. But the star of the show are those caraway bread crumbs. I would just make those, leave them as croutons and make the Caesar salad of your life. ⠀

ALMOND & SUMAC DUKKAH⠀
Hot damn, I love dukkah. It's been slow to catch on here in North America, but I fell in love with it back in Australia about 20 years ago where one of my favourite fancy places would serve a little dish of it with bread and olive oil for dipping. I've never made it myself - I assumed I'd need a food processor. But this recipe from Bäco uses a mortar and pestle to break up the toasted nuts, seeds and spices. ⠀

Toast almonds, then lightly crush using a mortar and pestle. Remove to a small bowl. Toast sesame seeds in a dry pan until golden and add those to the almonds. Dry toast cumin seeds, coriander seeds and pepper until fragrant. Crush with salt using the mortar and pestle, then add to the almonds. Mix through sumac, lemon zest and olive oil. ⠀

This was so easy to make that I feel like a total fool for not making it earlier. And it's so good! This will definitely be increasing my bread consumption, and I can't wait to sprinkle it over eggs. ⠀

BÄCO⠀
I understand how lame this is going to sound, but when I started flipping through this week's book, it felt really exciting. Like, I couldn't wait to try combining the flavours being suggested. It really felt different, and in a really good way. ⠀

Bäco Mercat is a small restaurant in the heart of downtown Los Angeles, owned by Josef Centeno. He also owns another four or so places within the same block. He's known for throwing together key ingredients and flavours from totally different cuisines: like a miso-based bagna cauda, and red onions pickled with rose and mint. Fascinating, right? ⠀

Centeno's book, Bäco (written with Betty Hallock) starts with a section on condiments, spice mixes, sauces, etc., and is then followed by chapters based on a theme ("earthy | sharp | velvety | savory" is one example) and each of these is ordered from lightest dish to most substantial. ⠀

For the average home cook, the true value of this book is that very first section with dressings, pickles, and spice mixes. They are so inspiring, different and delicious. Spend time making those, then get inspiration on how to use them from the recipes in the rest of the book. ⠀

But those recipes in the rest of the book are probably more appropriate for kitchen professionals - most make use of one of those recipes from the beginning of the book, and many (not all) have a lot of steps. And because once you have made a Creamy Juniper-Tarragon Tahini Dressing, whatever you do with it is going to be one delicious dinner. ⠀
