A new Uproot Kitchen email newsletter just went out, with a friendly nudge towards #BackToBasicsJanuary - a challenge I have run in the past to encourage home cooking + a healthy new year (who remembers?! πŸ™‹πŸ»β€β™€οΈ). While I’m not running it this year since I was traveling, I’m still trying to implement some of my favorite takeaways from the challenge. One example? Here's a quick #BackToBasicsJanuary dinner idea + recipe: FOIL PACKET SALMON. Works for most veggies you have in the fridge!

Recipe: Serves 2
Preheat the oven to 350 degrees.
Prep some #veggies + divide the mixture between 2 two pieces of foil, keeping it to one side.
Place one #salmon fillet on top of each pile of veggies. Season #fish with salt, pepper, and garlic powder. Fold the foil overtop of the fish, and crimp edges.
Bake at 350 degrees for 20 minutes.
Eat on top of your grain of choice (pictured is #quinoa flavored with turmeric). #uprootkitchen
