Fakeaway Cheese Calzone πŸ•πŸ•πŸ•

Ingredients:
1 tortilla wrap
Fillings: (your own choice)
I used:
2 tbsp tomato puree
1/4 yellow pepper (diced)
2 mushrooms (sliced)
Handful grated cheese
1 egg (beaten)

Method:
1. Spread puree on one half of your tortilla leaving a 1cm gap round the edge of the tortilla
2. Pop the remaining ingredients on top of the puree
3. Brush the beaten egg over the rest of the tortilla (that has no topping on) and fold in half.
4. Crimp round the edges with a fork and brush the top with the egg
5. Pop in the oven at 180 degrees Celsius fan assisted for 12-15 mins until golden πŸ•πŸ…πŸ§€

Ellie has been so uncomfortable with sore gums the past few days, so this was a life saver for a bit of relief! I popped some frozen blueberries and banana into it, and she couldn't get enough. I love that this comes with both a smaller and larger sized mesh teet as Ellie isn't big enough to master most generic sized teets that come with similar products. I also love that I can twist the handle to move the food further up the teet as opposed to using my hands which just leads to a sticky drooly mess πŸ™ˆπŸ˜‚ Also a super way to introduce foods without the worry of gagging/choking. Sweet Potato 'pizzas' πŸ•πŸ•πŸ• Super easy and only a few ingredients and can be mixed and matched🍴
Ingredients:
Sweet potato
Tomato puree
Cheese
Optional toppings (I used tomato and pepper)
1. Simply slice a couple of slices of sweet potato (or less or more) at about 1-2cm thick, pop on a baking tray lined with greaseproof paper
2. Cook at 180 degrees Celsius fan assisted until soft but still holding their shape (around 20 mins)
3. So last week we tried these Carrot and Cumin Waffles from Heavenly Organic Superfoods and they have been a massive hit with Jacob! πŸ₯•πŸ₯•πŸ₯•So I thought I'd try something similar this week and made some Carrot and Cumin 'Crisps' Super quick and super easy! πŸ˜‹πŸ˜‹πŸ˜‹
Simply peel and cut carrots as thinly as you can (the thinner they are the crispier they will go) toss them in a bowl with 1/2 tbsp olive oil, a pinch of salt (optional) and a pinch of Cumin. Lay them out flat on a baking tray lined with greaseproof paper and cook at 175 Degrees Celsius for approx 15-20 mins until crisp. Roasted Tomato Soup with Roasted Red Pepper and Chilli, now in the Slow Cooker for 7 hours then blitzedπŸŒΆπŸ…

Ingredients:
1 pack of cherry tomatoes, ripe, halved (approx 500g)
6 large tomatoes, ripe, quartered
3 cloves garlic (2 skin removed and crushed, 1 finely chopped)
3 tbsp good olive oil
2-3tbsp balsamic vinegar
1 1/2 tsp dried thyme
Salt and pepper to taste
3 medium carrots (roughly chopped)
1 onion (roughly chopped)
1 red pepper
1 red chilli (de-seeded and sliced)
1 tsp dried basil
2 tbsp tomato puree
Dash of Worcestershire sauce
600ml veg stock
Handful of fresh coriander (roughly chopped)
3 tbsp creme fraiche (optional)
Parmesan .
Method:
1. Simply place your pepper on top of the gas hob over a medium heat turning until all of the skin is blackened. Then pop in a zip lock bag and leave for 15 mins. Remove from bag then peel. If you don't have a gas hob you can roast the pepper in the oven with a little olive oil for approx 25 mins at 200 degrees Celsius then pop in the zip lock bag. Or you can simply buy a jar of roasted red peppers
2. Place all the tomatoes and the 2 crushed cloves of garlic on a baking tray and toss with 1 tsp of dried thyme, the balsamic vinegar and a little olive oil and roast at 200 degrees Celsius for approx 25 mins
3. Place the tomatoes, garlic and pepper and all the juices into the Slow Cooker
4. In a saucepan heat a little olive oil over a medium heat and add the carrots, onion, chilli, remaining garlic, basil, and the remaining time and cook until wilted (approx 7 mins)
5. Transfer to the Slow Cooker and add the Worcestershire sauce, veg stock and coriander
6. Cook on low for 5 hours
7. Remove the soup and transfer to a blender. Blitz and return to the Slow Cooker
8. Heat for a further hour
9. Mix in the creme fraiche (optional) and serve with a little Parmesan

The recipe was missing a few steps unfortunately so I've re-written it to help you mummies out πŸ–ŠπŸ–ŠπŸ–Š

Ingredients:
125g butter (melted)
2 tbsp milk
1 tsp vanilla extract
2 eggs (beaten)
100g self raising flour
1 tsp ground mixed spice (cinnamon will work)
50g brown sugar
75g dried blueberries
75g porridge oats
1 banana (mashed)
50g apple puree (apple sauce or homemade will also work)

Method:
1. Sieve together the flour and sugar and add the oats and mixed spice
2. Melt the butter and syrup in a pan over a medium heat until combined then remove from the heat and add the oats, milk, vanilla, eggs, banana, blueberries and apple puree and mix together
3. Combine the wet ingredients with the dry ingredients (don't over mix or your muffins will be hard, mix until just combined)
4. Pour into muffin cases (this recipe will make approx 8) and cook at 160 degrees Celsius fan assited/180 conventional
TIP: Don't open the oven door! Once the muffins are removed they will feel soft but will become harder as they cool 🍌🍌🍌

Lunch is Hidden Veggie Butternut Squash Mac 'n' Cheese with Quick and Easy Wholemeal 'Garlic Bread' πŸ§€πŸ… To drink: Frozen Spiced Banana Milkshake 🍌🍌🍌 Ingredients:
1 cup maccaroni
50g butter
50g plain flour
600ml whole milk
2/3 handfuls grated cheese (depending on how cheesy you like it - taste as you go)
50g Parmesan cheese
1 tsp cracked black pepper
1 tsp paprika (optional)
1/2tsp English mustard (optional)
1 onion (diced)
8 cubes of butternut squash (the size of a dice)
Method:
1. Cook maccaroni according to the packet instructions - leave in the water and set aside
2. In a saucepan melt the butter over a medium heat and fry off the onion and butternut squash for around 6-7 minutes and mix in the flour until it forms a thick paste (this is a basic roux) blitz in the blender then return to the hob
3. Turn up the heat and add the milk whisking until all the roux has dissolved into the milk and it has thickened slightly
4. Add the cheeses, mustard and paprika and stir well with the black pepper
5. Drain the pasta and mix with the sauce and pour into a casserole dish (i also mixed in quartered cherry tomatoes at this point - optional)
7. Cook in the oven at 180 fan assisted or 200 degrees for 15-20 mins until golden on top and bubbling 😘😘 Garlic bread:
1. Simply melt 1/2tbsp butter and mix with 1/4 clove of garlic (finely diced) and a pinch of mixed herbs (optional)

2.pop your bread under the grill until toasted on one side then flip over and toast slightly. Brush on the butter mix and grill until cooked approx 6/7 mins 🍞

Milkshake:

FAMILY FOOD πŸ—πŸŒΆ So tonight I tried another recipe from my 'From Mother to Mother' Recipe book by Lisa Faulkner and it was amazing! 😍 Lisa calls this 'Chicken Fiesta' and it is Chicken, Chorizo & Rice with a tomato base πŸ—πŸ… Jacob hasn't eaten too well with his teeth coming through but he had 2 full bowls of this tonight! And I also had seconds!🍴🍴🍴 The recipe below is copy and pasted from the Recipe Book with a few little tweaks 🍴🍴🍴

Ingredients:
1 tbsp olive oil
150g chorizo (sliced)
1 onion, finely chopped
2 celery sticks, finely chopped (we didn't use this)
1 red pepper, thinly sliced
3 garlic cloves, crushed
500g boneless, skinless chicken thighs, roughly chopped
1x400g tin chopped tomatoes
1 tbsp tomato purΓ©e
250g basmati rice
600ml chicken stock
Small bunch of oregano, chopped
Handful of chopped flat leaf parsley
Salt and pepper to taste πŸ”Ή
We like a little kick (not spicy) so I also added 1 red chilli, deseeded and sliced
1 heaped tsp paprika
1/2 tsp crushed chilli flakes
Method:
1. Heat the oil in a lidded ovenproof pan or casserole dish and cook the chorizo for 5 mins over a high heat until it's releases its lovely paprika oils. Add the onion, celery and pepper, reduce the heat to medium and cook for a further 10 minutes. Then add the garlic and cook for 30 secs, followed by the chicken, tomatoes and purΓ©e. Season well.
2. Heat the oven to 190 Degrees Celsius. Add the rice, stock and oregano to the pan, stir to combine, then bring to the boil. Cover and cook in the oven for 25-30 mins, stirring once after about 15 mins. Remove from the oven, stir through the parsley and serve 🍴

Tonight's tea is a fun twist on a tortilla pizza using Ricotta and Red Pepper Pesto, some yummy Thyme and Parmesan Aubergine 'Chips' and Some Blueberries, Natural Yoghurt, Honey and Cinnamon πŸ˜‹πŸ˜‹πŸ˜‹

For the Tortilla Pizza-
Ingredients:
1 Wholemeal Tortilla
1 Tbsp Tomato PurΓ©e
1 Tbsp Red Pepper and Ricotta Pesto (shop bought from Asda)
Handful of Grated Cheese
Handful of Fresh Spinach πŸ”Ή
Method:
1. Line a baking tray with grease proof paper and pop on your Tortilla
2. Spoon over the Puree and Pesto, sprinkle on the Cheese and Spinach. We added a little Crushed Chilli Flakes for a little heat πŸ”₯
3. Pop in the oven at 170 Degrees Celsius Fan Assisted for 8-12 mins until the cheese is golden and bubbly πŸ”Ή
For the 'Chips'-
Ingredients:
1/2 an Aubergine
1 tbsp Grated Parmesan
1/2 tsp Fresh Thyme
1 tbsp Olive Oil
Pepper to taste
Method:
1. Slice your Aubergine into chip shapes and pop in a little bowl
2. Toss the chips with the remaining ingredients coating well
3. Pop on a baking tray lined with grease proof paper making sure no chips overlap
