As we have our new pup we have to stay in with him this week so today I'm stocking up on some freezer cooking. ❄️❄️❄️ We've got some Gnocchi made up and the great thing about Gnocchi is you can freeze uncooked and boil straight from frozen. This mornings breakfast was deeeeeeee-licious! πŸ˜‹ Leftover sweet potato and cheese mini omelettes - AND... Only 3 ingredients! 😳😍 I had some mashed sweet potato leftover so I made these in no time!
Ingredients:
300g sweet potatoes (boiled)
6 eggs
Large handful grated cheddar (the more cheese the better!) πŸ˜‹
1/2 tsp pepper (optional)
1/2 tsp cayenne pepper (optional)

Method:
1. Peel, cube and boil your potatoes, drain and leave to cool
2. Add the cubes of potato into a blender (if you don't have a blender you can mash all ingredients by hand) then add in all the remaining ingredients and blitz (not for too long leave a few chunks if you like)
3. Grease your muffin tray with butter and pour in the mix approx 1/2cm from the top
4. Pop in the oven at 170 degrees Celsius fan assisted for 20-30 mins until golden brown - I also sprinkled a little more cheese on top of each before popping in the oven (we love cheese! πŸ§€) Enjoy! ❄️ freeze individually wrapped and defrost overnight in the fridge. So last week we tried these Carrot and Cumin Waffles from Heavenly Organic Superfoods and they have been a massive hit with Jacob! πŸ₯•πŸ₯•πŸ₯•So I thought I'd try something similar this week and made some Carrot and Cumin 'Crisps' Super quick and super easy! πŸ˜‹πŸ˜‹πŸ˜‹
Simply peel and cut carrots as thinly as you can (the thinner they are the crispier they will go) toss them in a bowl with 1/2 tbsp olive oil, a pinch of salt (optional) and a pinch of Cumin. Lay them out flat on a baking tray lined with greaseproof paper and cook at 175 Degrees Celsius for approx 15-20 mins until crisp. The original recipe is super simple and great for quick on the go snacks or a simple breakfast for a tired Mumma! πŸ”Ή
Ingredients:
12 tbsp porridge oats
1 banana mashed
1 tbsp peanut butter
1 tbsp honey
Method:
1. Simply mix the peanut butter, honey and banana together then add the oats and mix to form a 'dough' roll into balls and you can eat just like this! Or you can jazz them up we simply melted some 'RAW' organic chocolate (any will do) and I dipped the energy balls into the chocolate then I used a few different toppings - desiccated coconut, hundreds and thousands, crushed cashews and cocoa. Whenever family are around Jacob is spoilt with chocolate buttons so we thought we would make some for the car journey this weekend. Super quick, super easy... And super yummy! πŸ˜‹πŸ˜‹

We used 'RAW' Organic Chocolate as we had some in the cupboard but you could use any! Simply melt your chocolate and spoon onto a plate lined with greaseproof paper into little disks and pop on a topping - we used Raspberries, Banana, Blueberries and Dried Coconut πŸ˜‹ then pop in the fridge to set! Now to wait until Saturday for the verdict but when it comes to chocolate and fruit I think Jacob will be happy! 🍭🍭🍭🍭

Family Favourite Frittata (Feta, Roasted Pepper and Chilli) 🌢🍳 Frittatas are such a fab way to get veggies into kids, a great way to use up any leftover bits and just a delicious quick dish that the whole family will love! We used Roasted Peppers as the main filling for this one 🍴
Roasted Peppers - if you have a gas oven simply turn one of your hobs up to the highest heat and pop your pepper directly on top. Keep turning (using tongs if you don't have asbestos fingers like me) until the skin is completely blackened. Transfer straight to a zip lock bag or wrap in foil and leave for 15 mins then peel the skin off. If you don't have a gas oven you can simply chop the pepper directly in half and cook chopped side down on 220 Degrees Celsius fan Assisted for approx 30 mins until the skin is blackened then pop in the zip lock/foil for 15 mins then peel the skin. You can buy them already roasted and peeled in jars but it really is so simple and much cheaper to do them yourself πŸ”₯
For the Frittata-
Ingredients:
1 whole roasted pepper (sliced)
6 eggs
60ml milk
Large handful of Spinach
2 cloves garlic (peeled and diced)
1/2 red onion (thinly sliced)
7 cherry tomatoes (halved)
1/2 red chilli (deseeded and thinly sliced)
80g feta cheese (you could use 2 handfuls of grated cheddar)
1 level tsp salt (optional, use less if using feta)
1/4 tsp black pepper
Method:
1. Simply mix together the eggs and milk and add the cheese then pop aside
2. In a pan add a splash of olive oil and fry the tomatoes and red onion for 2-3 mins
3. To the pan add the Spinach, garlic and chilli and cook for a further 3 mins
4. Line an ovenproof dish with greaseproof paper and transfer the cooked veggies into the dish spreading evenly and add the Peppers
5. Pour over your egg, milk and cheese mixture sprinkling with your salt and pepper (optional)

Easy Peasy Green Fritatta for lunch using up some leftover veg 🌱🌱🌱 This is super yummy and perfect for lunch! These can also be frozen individually and defrosted over night in the fridge πŸ˜‹

Ingredients:
6 eggs
60ml whole milk
Handful of spinach
1 red onion (sliced)
1 clove of garlic (finely diced)
Handful grated cheddar
5 tbsp fresh Parmesan (grated)
6 cherry tomatoes (sliced) - optional
Handful of cooked peas - optional
Method:
1. Pop the eggs, milk and spinach in a blender and blitz until blended
2. Fry the onion and garlic for 3-5 mins until cooked
3. Mix all the ingredients together and pour into an oven proof dish lined with greaseproof paper

method :
1. Combine the egg, flour in a bowl. Stir through the mashed banana
2. Heat the butter or canola cooking spray in a fry pan
3. Dollop the batter mixture into the pan and cook over medium until small bubbles appear
4. Flip the pancake and cook on the other side for a few minutes

Roasted Tomato Soup with Roasted Red Pepper and Chilli, now in the Slow Cooker for 7 hours then blitzedπŸŒΆπŸ…

Ingredients:
1 pack of cherry tomatoes, ripe, halved (approx 500g)
6 large tomatoes, ripe, quartered
3 cloves garlic (2 skin removed and crushed, 1 finely chopped)
3 tbsp good olive oil
2-3tbsp balsamic vinegar
1 1/2 tsp dried thyme
Salt and pepper to taste
3 medium carrots (roughly chopped)
1 onion (roughly chopped)
1 red pepper
1 red chilli (de-seeded and sliced)
1 tsp dried basil
2 tbsp tomato puree
Dash of Worcestershire sauce
600ml veg stock
Handful of fresh coriander (roughly chopped)
3 tbsp creme fraiche (optional)
Parmesan .
Method:
1. Simply place your pepper on top of the gas hob over a medium heat turning until all of the skin is blackened. Then pop in a zip lock bag and leave for 15 mins. Remove from bag then peel. If you don't have a gas hob you can roast the pepper in the oven with a little olive oil for approx 25 mins at 200 degrees Celsius then pop in the zip lock bag. Or you can simply buy a jar of roasted red peppers
2. Place all the tomatoes and the 2 crushed cloves of garlic on a baking tray and toss with 1 tsp of dried thyme, the balsamic vinegar and a little olive oil and roast at 200 degrees Celsius for approx 25 mins
3. Place the tomatoes, garlic and pepper and all the juices into the Slow Cooker
4. In a saucepan heat a little olive oil over a medium heat and add the carrots, onion, chilli, remaining garlic, basil, and the remaining time and cook until wilted (approx 7 mins)
5. Transfer to the Slow Cooker and add the Worcestershire sauce, veg stock and coriander
6. Cook on low for 5 hours
7. Remove the soup and transfer to a blender. Blitz and return to the Slow Cooker
8. Heat for a further hour
9. Mix in the creme fraiche (optional) and serve with a little Parmesan

The recipe was missing a few steps unfortunately so I've re-written it to help you mummies out πŸ–ŠπŸ–ŠπŸ–Š

Ingredients:
125g butter (melted)
2 tbsp milk
1 tsp vanilla extract
2 eggs (beaten)
100g self raising flour
1 tsp ground mixed spice (cinnamon will work)
50g brown sugar
75g dried blueberries
75g porridge oats
1 banana (mashed)
50g apple puree (apple sauce or homemade will also work)

Method:
1. Sieve together the flour and sugar and add the oats and mixed spice
2. Melt the butter and syrup in a pan over a medium heat until combined then remove from the heat and add the oats, milk, vanilla, eggs, banana, blueberries and apple puree and mix together
3. Combine the wet ingredients with the dry ingredients (don't over mix or your muffins will be hard, mix until just combined)
4. Pour into muffin cases (this recipe will make approx 8) and cook at 160 degrees Celsius fan assited/180 conventional
TIP: Don't open the oven door! Once the muffins are removed they will feel soft but will become harder as they cool 🍌🍌🍌

Lunch is Hidden Veggie Butternut Squash Mac 'n' Cheese with Quick and Easy Wholemeal 'Garlic Bread' πŸ§€πŸ… To drink: Frozen Spiced Banana Milkshake 🍌🍌🍌 Ingredients:
1 cup maccaroni
50g butter
50g plain flour
600ml whole milk
2/3 handfuls grated cheese (depending on how cheesy you like it - taste as you go)
50g Parmesan cheese
1 tsp cracked black pepper
1 tsp paprika (optional)
1/2tsp English mustard (optional)
1 onion (diced)
8 cubes of butternut squash (the size of a dice)
Method:
1. Cook maccaroni according to the packet instructions - leave in the water and set aside
2. In a saucepan melt the butter over a medium heat and fry off the onion and butternut squash for around 6-7 minutes and mix in the flour until it forms a thick paste (this is a basic roux) blitz in the blender then return to the hob
3. Turn up the heat and add the milk whisking until all the roux has dissolved into the milk and it has thickened slightly
4. Add the cheeses, mustard and paprika and stir well with the black pepper
5. Drain the pasta and mix with the sauce and pour into a casserole dish (i also mixed in quartered cherry tomatoes at this point - optional)
7. Cook in the oven at 180 fan assisted or 200 degrees for 15-20 mins until golden on top and bubbling 😘😘 Garlic bread:
1. Simply melt 1/2tbsp butter and mix with 1/4 clove of garlic (finely diced) and a pinch of mixed herbs (optional)

2.pop your bread under the grill until toasted on one side then flip over and toast slightly. Brush on the butter mix and grill until cooked approx 6/7 mins 🍞

Milkshake:
