Wagashi is a traditional Japanese confectionery served prior to drinking matcha, to take away the bitterness. This was a little different from the usual, being a soft jelly with a dollop of bean paste rather than the sweets with intricate designs that I am used to. I liked that it was not as sweet as the traditional version. To be honest, while matcha is an acquired taste, I find that good quality matcha is not really astringent or bitter if made properly, i.e. water that is around 82 deg C and whisked evenly so that there are no lumps in the tea. Keen to do the tea ceremony and wagashi workshops!
