A few months ago, I did the Whole 30 program and food reintroduction. I learned that my body creates an inflammatory response to not only gluten, but also oats, rice, and all other grains I've tried 🙁 I can eat them, and do on occasion, but I pay for it with bloating, and if I overindulge it also affects my breathing.
After overindulging during a recent weekend getaway, I cut out all grains but have been craving bread. Then yesterday I saw this recipe by @thepaleomom. I thought there was no way it could taste as good as it looks, but decided to give it a try. It Did. Not. Disappoint. I don't know how, but it even rose! Not only is it gorgeous all golden and warm out of the oven, the texture is dense but light and the seeds give it a nice crunch. I spent the wee hours of the morning dreaming of the many ways I will devour this loaf: plain, with sun butter and bananas, avocado toast, as a vehicle for hummus, the list goes on... #paleobread
