You will need the following:
1 GF hot dog bun
6 medium shrimp, steamed/baked/grilled
1 baby cucumber, sliced
1 baby potato, boiled, chopped
1 tsp Casa De Santé Lemon Herb seasoning
2 Tbsp. mayo (lactose-free)
1-2 Lettuce leave

Preparation
Chop the cooked shrimp, mix in the chopped cucumbers and chopped potatoes.
Season with Casa De Santé Lemon Herb seasoning and mix in the mayo, and mix well.
Heat or toast the bun, and arrange the lettuce leaves and the shrimp and potato mixture and enjoy.

It's okay to eat more some days than other days. It doesn't mean you'll get fat, it means you're respecting the needs of your body. Today I had the leftover stir fry and cauli mash with sauteed spinach. I was craving sweet so finished off with a bowl of grapes, banana and frozen berries topped with coconut cream and cinnamon. 1 pkg AIP friendly bacon
One large onion (I used 1/2 sweet onion and a 1/2 yellow onion)
2 small or 1 large honey crisp apple
1 T Blackstrap molasses
1 T organic maple syrup
1/4 t ground cinnamon
1 t ground fresh ginger (I use a paste for. Trader Joe’s)
1 T acid - lemon juice, raw apple cider vinegar, or Dijon mustard if you can have it
Sea salt to taste

The name of the game with making onion jam is to GO SLOW

I start off by chopping the bacon into small pieces and sautéing them until the fat is rendered but the bacon isn’t cooked down all the way. Drain off most of the excess oil (and save for cooking squash or sweet potatoes for another dish!). Dice your onions and apples and put them in the pan along with the bacon, molasses, maple syrup, ginger, salt, cinnamon, and choice of acid. Turn the heat down on your pan and cover it up. I started at about low/medium for 5-10 minutes, stirred, then turned very low, recovered and left it to sit for a good long while. Like, longer than you think. Long enough for everything to wilt and turn the same color. If you get nervous or you check and see the bottom may burn, put a spoonful of water in there, scrape the bottom, and get the heat even lower. When it’s done it should resemble my photo from yesterday, be a fairly uniform deep brown color, and be sticky and soft. Now you get to put that jam on EVERYTHING! 😋 On roasted sweet potatoes, root veggies, squash, on chicken breasts, as a salad condiment, put a dollop on your hot bowl of creamy butternut squash soup - you name it! Keep what you don’t gobble up immediately (right...) in an air tight container for up to a week or so. Have fun trying it on ALL THE THINGS 💚

This week sucked. I haven’t been getting enough sleep and I just felt terrible. But! I survived. In fact, one good nights sleep and I’m feeling a lot better. Sleep makes all the difference. First day of fall calls for some Vegetable Bone Broth Soup!
After 5 days on a liquid fast this was our first meal. In the past my husband and I had done fasts and then ended them with popcorn, Mexican food, snack food, or other very poor choices. Which was horrible I know. This time I put in as much thought to the pre and post fast planning as I did the actual fast. I knew I needed to pick foods that were healing and easy to digest.
I love soup and the cooler temperatures today made this even more enjoyable! .

I sautéed squash, bok choy, rainbow carrots, and celery and then added @bonafideprovisions chicken bone bone and chard. Let everything warm up and then added cooked spaghetti squash and topped with green onions and fresh basil.

@vicmarket goodies 🌱 Lately I’ve been eating the same veggies, day in, day out, which isn’t ideal for my gut microbiome. Eating a diverse range of fruits and vegetables feeds different types good bacteria and helps to create a colourful community in your gut, preventing any specific bacterial strains from taking over. So today I walked to the markets which I so rarely do, and bought veggies that I don’t cook with often (or ever). The cauli and eggplant are common offenders, but I’ve never used kangkung, okra or watercress and rarely cook with bok choy. I’m planning on making an Asian stir fry for uni lunches with the greens and eggplant, will use the basil and lemon in a pesto, and will add the watercress to salads. As for the cauli... that goes in everything 😅

A quick #dinner tonight thrown together in the skillet! If you've been around awhile, you've seen me post this before. If you still haven't tried it yet, change that.

Ground bison, leftover sliced carrots from the other day (used my kitchenaid to slice them!), asparagus I found in the fridge (took your advice @andradakitchen & it was delish!), spinach, everything else in this #recipe (swipe for it, one of my top recipes from #theperformancepaleocookbook) plus garlic & shallots (my 2 favorite ways to flavor meals).
