Confused about avoiding gluten, even if you haven’t tested as having a sensitivity? Totally understandable, and the answer to why we should avoid it goes way deeper than an insta post. The nutshell version is that first, gluten can trigger major paths to inflammation (like leaky gut), which we know leads to and exacerbates chronic illness, including autoimmunity. With Leaky Gut, large particles (like gluten) pass into the bloodstream where a panicky immune system forms antibodies against it and attacks. A tricky thing about gluten is that it’s proteins can mimic our own body’s tissues, so those antibodies we make against Gluten, can also become antibodies to our own tissue (namely, Thyroid tissue). Meaning, they can attack those tissues too, mistaking them for a foreign invader. WHEW, a quick version of why Autoimmunity and Gluten don’t play nice together. I personally think everyone should avoid Gluten, but more on that another day 😀

How we break the fast around here. Big ol' plate of food and not until usually 18 hours after supper (so typically between 11a-2p). #intermittentfasting has been working well for both of us for about the last year. When I shared a video citing work by a prominent #neuroscientist who studies #ketones and the brain on my FB about how IFing is more effective at inducing #ketosis than a #ketogenic diet (and raises blood ketone levels much higher, too) I got some incredulous responses. Tell me, IG fan, does that surprise you too?

This meal started with bacon, and I cooked everything else in the rendered fat: #KingTrumpet mushrooms 👑🎺 from @bluffcityfungi, platanós maduros, and kale. //
I know the ketogenic diet is crazy popular right now but it's just not good for me right now. I did ketogenic Paleo in the first year of my journey and I think it was important in healing my metabolism and making weight loss effortless. But after lots of experimenting I have learned I feel so much better eating carbs (and soluble fiber) from things like plantains, squash, yuca, ñame, malanga, sweet potatoes, and even properly prepared rice and beans (#notpaleo, don't send the #paleopolice!👮‍♀️) //
I have better body temps, better mood, better satiety, and feel more balanced. I KNOW it's better for me, but I have to say that the last few months I have felt this "peer pressure" to jump back on keto. It's made me think about the effect social media has on us and made me want to be careful with my words, because I don't want to make anyone feel pressure or stress about food!

RECIPE BELOW // Herbed Beef Stew with Carrots and Celeriac - When I picked up an Instant Pot, my cooking routine changed forever — long gone were the afternoons of spending hours “checking in” with a slowly simmering pot of stew on the stovetop. Now I can execute a fully tender, nourishing stew in less than an hour and a half, which is a huge win in my book!⠀

This recipe is the current iteration of a stew that I’ve been making over and over — a mix of celeriac and carrots and scented with fresh herbs. You could easily modify it to include a different mix of root vegetables and herbs to change up the flavor profile.⠀

🌿1 tbsp coconut oil⠀
🌿1 onion, chopped⠀
🌿4 cloves garlic, minced⠀
🌿1 cup bone broth⠀
🌿1 cup red cooking wine⠀
🌿2.5-3 pounds beef stew meat⠀
🌿4 carrots, chopped (about 2 cups)⠀
🌿4 ribs celery, chopped (about 2 cups)⠀
🌿1 medium celeriac, chopped (about 2 cups)⠀
🌿1 cup button mushrooms, halved⠀
🌿3 tbsps cassava flour⠀
🌿1 tbsp coconut sugar (optional)⠀
🌿1 tbsp apple cider vinegar⠀
🌿¾ tsp sea salt⠀
🌿2 tbsps fresh rosemary, minced⠀
🌿1 tbsp fresh thyme, minced⠀
🌿Green onions, for garnish⠀

👉🏻Add the coconut oil to the Instant Pot and press the "saute" function (if you are using a regular pressure cooker, use medium heat on the stovetop). When the fat has melted and the pan is hot, add the onions, and cook, stirring, for 7 minutes, or until translucent. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Turn off the heat.⠀
👉🏻Add the broth and wine to deglaze the pot. Add the meat, vegetables, and all other ingredients (except the green onions) to the pot and mix with a wooden spoon to incorporate. Close and lock the lid, and select the "manual" setting to cook at high pressure for 35 minutes (or simply press the "meat and stew" button). If you have a regular pressure cooker, cook at high pressure for 40 minutes.⠀
👉🏻When the time is up, place a damp towel on the pressure release valve and carefully use a wooden spoon to open the valve and quick release the pressure.⠀
👉🏻Let cool enough to handle and serve.⠀

Lunch is back at my desk today, because I was too late to join my colleagues, and I was happy to just read up on the news while munching away. I know, not the best habit, but it provided a nice distraction from the statistics book I need to finish. Lunch was more of the seemingly endless pile of leftover veggies in my fridge (stewed red cabbage, roasted brussels sprouts, and sweet potato) with some flaked salmon on top.

I am so in love with this legume-free hummus! I whipped this up in no time at all, outside of the 20 passive minutes I roasted the garlic. I let the artichokes drain during the roasting time, and threw a total of five whole ingredients in the vitamix - including salt. .
