Can't even begin to explain how delicious this home made gluten free, grain free Butter Chicken on cauliflower rice tasted for dinner. Could have eaten it for breakfast too .. if we had any left! A fantastic mix of spices, healthy fats and vegetables. Big thumbs up from Mr 7 & Mr 11 too. From Family Food by Pete Evans.

Buckwheat berry porridge
Buckwheat is a fabulous breakfast option. Technically a seed (not a grain) buckwheat is gluten free, low GI, high in amino acids, fibre and packed full of minerals. It also contains tryptophan, the amino acid that helps produce serotonin. And who doesn't want a few extra feel good hormones in their life?
Ingredients:
1 cup buckwheat groats (soaked overnight)
1 grated Apple
2 tbs chia seeds or flaxseed for added omega 3
1 cup water
1.5 cups fresh almond or coconut milk
1/2 tsp cinnamon
Pinch salt
A handful of blackberries

Method:
Combine all ingredients except berries, cook on low heat for five minutes, stirring gently.

Once it's soft and well cooked, add in half the berries, stir.

Serve in bowls, top with extra berries. Drizzle with some vanilla infused coconut cream.

So apperently lack of sleep wasn't the only thing that has triggered this flare. What's really crazy though, was in spite of bad flare & painful morning, I had gotten up & around & moving. My pain & stiffness was all bearable. I was in middle of cleaning & doing stuff around house when I just got hit w pain HARD I had to sit down. My joints felt like they were throbbing! Baby girl asked if it was going to rain (bc she knows rain makes me hurt) I told her I wasn't sure I hadn't checked weather. Less than 20 min & BAM !! We got hit w an insane severe storm, that seemed to pop in out of nowhere. As in went from gloomy, but calm to instant downpour of sideways rain, thunder & vicious winds. It was gone almost as quickly as it came. Leaving tree branches snapped throughout neighborhood, fence panels knocked over & took out our power for good 6+hrs !! Well power is back on & so is baby! I'm hurting so bad, but stuck on couch again. More missing sleep and insane weather are kicking my butt lol. Oh well. It is what it is 😘

Local romaine lettuce with @kouzinifoods olive oil, @jilzcrackerz "croutons" & @braggsacvhealth vinegar. Grass fed ground beef cooked up with shredded carrots, garlic, @tinstarfoods ghee & @redmondrealsalt in my trusty @lodgecastiron skillet. The sunburst squash was sliced and seared in the same skillet after the beef.

Almond meal pancakes made with love

Ingredients:
1.5 cups Almond meal
4 eggs
300 mls Organic coconut cream
1/2 tsp baking powder
1/2 tsp cinnamon
Pinch salt

Method:
Mix all dry ingredients
Seperate eggs
Whip egg whites, set aside
Add in egg yolks, mix well.
Fold in egg white, mix gently.
Pan fry in butter or coconut oil.
Top with berries, bananas and drizzle with a dash of honey.
Serve to folks you love ❀️

Well with all our galavanting we actually haven't made it to the beach. And it's really only an hour and a half away πŸ˜‚
So if I have to be busy at home today, it might as well at least smell like the beach 🌊 right???
2 drops wild orange, lemongrass, and spearmint plus 1 drop rosemary. (And rosemary & wild orange are great for focus!!)
