Coconuts are the superfood of choice these days! Everywhere you go you will hear about Coconut Oil or Coconut Milk, and rightfully so! These fats are so versatile and pack so much nutrition in small doses that they definitely have earned their fame. You can add coconut to most foods by subbing it for other similar ingredients.

For example, instead of using milk or juice as a base for your smoothie, use coconut milk or coconut water. Whip up some coconut cream and replace the whipped cream on top of your dessert. Coconut oil is ideal for cooking because it has a high smoke point. Adding coconut oil to your veggies to will help you feel fuller longer. The possibilities are as endless as the benefits with this fat!

Look at the color of my beet and hemp milk, which is the basis of this mornings smoothie. I just threw some frozen beets (frozen from my CSA) and 1/4 cup of hemp seeds into a cup of water. Blended till creamy and smooth in my Vita-mix.
Now I’ll add the rest of the goodies into my smoothie and I’m out the door.

Lunch is leftovers from this gorg platter, last night's Mother's Day dinner. Whole roasted rainbow carrots & grass fed flap steak. Flap steak isn't a fancy cut, but it's quite tender. I've been able to buy affordable grass fed beef from a local farm here!
Flap Steak:
2lbs meat
1/4 cup coconut aminos
1 tbsp pink Himalayan salt
1 tsp ginger powder
1 tsp dried cilantro
1 tsp garlic powder
2 tbsp olive oil.
Mix all ingredients in a bowl with meat. Toss thoroughly & set in fridge to marinate for at least 2 hours.
Remove from fridge 30 minutes before cooking.
Preheat oven to 500F broil
Line a baking sheet with foil. Place cooling rack over it. Arrange flap steaks on the rack spread out.
Broil for 3 minutes. Turn over carefully with tongs. Broil for another 5 minutes. Remove from oven & let the meat settle for 5 minutes before serving.
For the carrots:
Do these before the meat as they take longer.
Preheat oven to 400F.
Trim & peel 2 bunches of carrots.
Any carrots thicker than your thumb, cut in half lengthwise.
Drizzle sheet pan with 1 tbsp olive oil. Arrange carrots flat across the sheet pan, don't overcrowd.
Mince 2 cloves garlic & mix with 1 tsp oregano, 1 tsp coarse sea salt, a pinch of cinnamon & 2 tbsp olive oil.
Drizzle this mix all over the carrots. Use fingers to spread the seasoning all over them.
Roast at 400F for 35-40 minutes. Depending on how thick your carrots are. I like mine extra crispy, so I'll even go to 45 minutes. *dont turn off the oven, set to broil for the meat, you can even use the same sheet pan!

Did you know it takes 12 times of trying something new before your taste buds change? Most people tend to stick to foods they are familiar with.This can actually cause antigens to build up in the body which can often lead to being reactive to foods. Even so-called healthy foods, especially if the gut is leaky or immune system is compromised. We have probably all looked at a new food at one time or another and decided that we didn’t like it before we even tasted it. Art Therapy! (My 3 year old niece standing proudly in front of her works of art ❤). Being creative is good for us! As art therapy is so expensive I've decided to get some paints out and do a bit of art therapy by myself! 'The Works' is a shop in the UK that has inexpensive art and craft supplies. Art can help everyone to relax and de-stress. I started a cake baking business a few years ago (as a way to be my own boss and work flexibly from home because of my health issues) and I remember waking up at 4am (I couldn't sleep!) and I went down to the kitchen to continue to work on my sugar models (decorations for some cakes I was making) and I thought to myself that I've never felt so happy in my whole life! I used to love being creative as a child (making things out of Fimo, has anyone heard of that?!) Even if it's just doodling for 10 or 15 minutes a day (maybe I'll keep a mini sketchbook in my bag), I want to make art a part of my life. I have to try not to be so critical and just enjoy it and go with the flow! Creativity is good for everyone's health and wellbeing 😄 For me, when I'm creative it takes me away to another place (I am completely in the moment, time stands still! A bit like mindfulness meditation ☺ but perhaps even better!) Don't worry if you think you aren't artistic, or you were never good at art in school...drop all the feelings you have about your ability and allow yourself to be free and in the moment! As a follow up to yesterday’s blog post on my keto-journey, I think it’s important to make the distinction between what I call ‘Nutrient-Dense Keto’ and ‘Poorly-Sourced-Keto’. # ‘Nutrient-Dense Keto’ means consuming foods that are full of nutrients, well-sourced, free of toxic crop oils and chemical additives and are HEALING foods. Foods that lead to healing or alleviating auto-immune diseases, inflammation, hormonal imbalances, immune-boosting and yes - can lead to body fat reduction.
Foods like:
▫️Pastured chicken, pork (pastured Bacon even) and eggs ▫️Organic, grassfed beef, bison and lamb
▫️Wild-caught fish ▫️Organic nutrient-rich vegetables ▫️High-grade organic fats/oils like coconut, avocado, olive and ghee ▫️Organic healthy fats like nuts, nut butters, avocado, coconut milk, etc.
▫️Aged grassfed cheeses (if you can tolerate)
# ‘Poorly-Sourced Keto’ by comparison is consuming commercially-raised meats and eggs fed with grain-meal and pumped full of antibiotics, steroids and their own stress-toxins by way or poor conditions. Consuming processed cheeses and dairy, lunch meats, highly processed bacon and sausages all with unnecessary additives (just read a few of the ingredients on the label! 😱😱). #

Breakfast this morning was a fruit platter with watermelon, banana, apple and blueberries. And for dessert ... we had biodynamic yoghurt with berries, flaked almonds and a good drizzle of raw honey.
We try to mix things up at breakfast time so that we :
A. Keep it interesting
B. Get a wide variety of nutrients and
C. Because I think it's important for my kids to learn to eat any type of dish (as long as it's real whole food) any time of the day.
