I bookmarked a protein fluff recipe probably... 3 years ago but JUST got around to making it today. And daaaang I’m so glad I did!

I really wanted to post this recipe on the blog but I don’t have any openings until MARCH 😱 and this recipe is just too good to wait until then. So I’m gonna post it here for ya!
HEALTHY BLUEBERRY PROTEIN FLUFF
200g (1+1/2 cups) Frozen Blueberries
1/2 cup Unsweetened Vanilla Almond Milk
1/2 tsp Vanilla Creme-Flavored Stevia Extract (@sweetleafstevia)
30g (1/3 cup) Unflavored Casein Protein Powder** (@nkdnutritioninc)
1/2 tsp Xanthan Gum
In a food processor, add the frozen blueberries, almond milk, and stevia extract. Puree until almost completely smooth.
In a small bowl, whisk together the protein powder and xanthan gum. Dump this into the processor and blend again. After about 10 seconds, scrape down the sides of the processor to catch any powder that flung up, then blend again.
Blend for ~1 full minute, or until the mixture doubles in volume and turns a nice blue/purple color. Serve immediately.
**If you use vanilla-flavored protein powder, you can most likely omit the stevia extract.
