Chipotle Queso and homemade tortilla chips inspired by @testkitchen's Nacho Dip. Toasted Pecan Scones from Vegan for Everybody by @testkitchen for this month's #vegancookalong. All of the baking recipes that I've tried in this book have worked. I especially love the method for these scones: pulse solid coconut oil in the processor with the flour mix. So easy and so good! We ate them warm with homemade butter and called it breakfast. This was seriously good! It's the Thai-style tofu and basil lettuce cups from this month's #vegancookalong, @testkitchen's #VeganforEverybody. I used a mix of Italian and Thai basil because Thai food! I've cooked a lot of Thai food and I've never heard of low-temperature stirfrying, but I followed directions and I loved the result! Oh, I only used one shallot because it was big and 3 shallots seemed excessive for 14oz of tofu.
