GOOD OL' SUNDAY'S COMFORT BAWA LUNCHEON : PARSI CUISINE (which I keep returning to in several Post's), is an eclectic mix of HOT & SWEET, NICE & SPICE. It involves SIMPLE yet DIVERSE ingredients that in theory seem a bit ODD but make COMPLETE SENSE on a PLATE. 'PARSIS' or 'PARSEES' are descendants of ZORASTRIANS who fled IRAN during da Arab invasion of PERSIA (Modern Day Iran today), in da 17th century. They eventually settled along da West coast of INDIA & developed a DISTINCT cuisine, one that proudly boasts of GUJARATI, MAHARASHTRIAN, IRANIAN & also PROPPA' BRITISH flavours. From our Irani roots we've borrowed a flare for EXTRAVAGANT FEASTS. We love to spend hours cooking before a big ceremony & prepare dishes that are absolutely mind-blowing: KOLMINO, DHANDAL PATIO ( a semi dry Prawn curry served wt rice & lentils). Da word ‘dhan’ translates to ‘rice’ & ‘dar’ means ‘dal’. Da patio is a prawn preparation that is served wt dhan dar... This basic meal of a typical Parsi household on any festive occasion is a trio of rice, lentil & as mentioned a thick curry called Patio; pronounced Pa-tea-O & not a patio like da porch. Possibly combined at least 2 centuries ago to make it simple, quick & yet something quite special. It continues to be a healthy, ageless & quite timeless. A favourite option to serve on any occasion including SUNDAY'S.
A perfect balance of SWEET, SOUR & SPICE made it just right. Paired wt a PARSI SURTI PAPRI in order to get some greens into da meal.This PATIA was close to PERFECT wt a slightly thick consistency, & finely balanced to be perfectly tiku-mithu-khatu which is spicy-sweet-sour da TRINITY of PARSI FOOD . . .
