DAY FOUR - Yesterday I briefly mentioned beet tops....well my sister-in-law makes them and reminded me that they're prob the most nutritious part of the beet. Chop off stems because they can be tough and when dealing with inflammation it's best to make digestion easy on our suffering bodies. Sautée them in a little bit of butter or olive oil and garlic, fresh Himalayan pink sea salt till wilted & freshly cracked black pepper. A big bunch cooks down considerably but they are delicious and not bitter! Is soy good for us?? Based on the most recent research, it is a resounding yes, for MOST people. In fact, the most recent research shows the benefits overwhelming outweigh the negatives and actually help decrease the risk of certain cancers, including breast and prostate.
Soy is an important protein for people who are vegetarian/vegan and not eating any animal products, but also a great alternative for those who do eat animal protein but want to reduce their intake and find other plant-based proteins. There is a population of people with certain types of breast cancer and /or are undergoing endocrine therapy where isoflavones could interfere with medications, as well as some thyroid medications. Therefore, always do your due diligence and research!! There are many scholarly articles on the matter, many of which I read and will not bore you with the gory details, but I am sharing one link from Dr. Oz who explains it in basic terms. Remember: nothing is simple, consult your doctor, stay informed and advocate for your AND your family's health. I advocate advocation! :-)

Cleaning out the fridge!
Today's tofu scramble:
One garden tomato
one red onion
one banana pepper
Sauté above in 1 to 2 tbsp grapeseed oil
Add:
Tofu cut up
arugula (wilt)
Beans (any kind, I had red Spanish in the fridge.)
fresh lime juice
1 tbsp turmeric
1 tbsp chili powder
1/2 tbsp cumin
2 tbsp nutritional yeast
sea salt to taste
Touch of Cayenne pepper (hot!) optional
Mix ingredients and heat through, a few minutes.
Place on top of:
Brown rice (Trader Joe's organic frozen)
Serve with:
Avocado slices
Sliced tomato
Drizzled olive oil and squirt of lime juice
Garnish with cilantro.

Fruity antioxidant Saturday 🍊🍎🍑Oranges, nectarines and gala apples. I FINALLY got a juicy orange batch 😋For some reason the last 2 bags of organic oranges I got were so dry 😒, and I been wanting a juicy orange after re-listening to MM's heart health ❤️show. I re-listen a lot cuz it keeps me motivated 😬🍎: Anthony said he was talking to someone who hadn't had an orange for a year. AW couldn't believe it..like, he was horrified. So he gave him 'direct orders' - to eat 3 oranges, every single day☝🏼🤓. The guy asked how long he has to do that for, and AW said til he tells him to stop. So the guy says 'bummer'. Then Anthony's like "What'd u mean, bummer? Bummer for enjoying 3 delicious oranges??" 🍊🍊🍊😂 So I've been eating a lot of oranges lol. They don't just have a ton of vitamin C, they have bioflavonoids...and calcium that protects the heart AND for the nervous system. Rosehips (tea) are also high in vitamin C & antiviral. Asparagus is also important for the heart. Btw, if the heart is overworked it's cuz your liver's probably in bad shape. Remember the heart get its blood from the liver! Layer:
Marinara, crispy eggplant, vegan ricotta, repeat, end with marinara.
Sprinkle with nutritional yeast and chopped, sauteed kale and bake @ 375 until heated through, about 20 minutes.

Grain of the day, barley! I made this recipe up simply because I had these things in my refrigerator and I wanted to use them up!!
Lemon Garlic Broccoli and Barley Salad with Green Lentils and Pine Nuts
Cook barley and lentils as directed, very simple and similar to just cooking a pot of rice. Set aside.
Note : I did soak my barley and lentils in water overnight. This extra step allows for easier digestion and reduce gas :-) You can always get cooked lentils as well in the store, Trader Joe's has a good variety in a box.

Roast broccoli, purple cabbage, garlic, purple onions, (lots of antioxidants here!) with a drizzle of olive oil, sea salt, roasted red pepper flake and juice of one lemon. Roast for about 20 minutes at 375 or until lightly browned, don't overcook!
I tossed them all together, and added a little more lemon, olive oil, sea salt and crushed red pepper to taste. All my recipes are simply guidelines, taste as you go along and make sure it is suitable for you! Enjoy :-)
