Lemon raspberry cake with sour cream + lemon icing 💫💗
And now a little story about the cake with a point and some thoughts for the new year:
A very lovely cake with deliciously fresh flavours that nevertheless turned out a bit too dense, because I forgot to add the butter to the cake mixture, and only remembered it when putting the cake into the oven and noticed the casserole with the melted butter. I tried to fix it by returning the cake mixture to the bowl and then adding the butter before I returned it to the loaf tin and the oven. In the extra mixing, however, the cake mixture lost its fluffiness and ‘won’ some intense denseness instead.
Luckily, the cake was delicious anyways, but I really shouldn’t have baked a cake on the first day of the year having only slept 1,5 hours that night, because I get forgetful and clumsy. Instead of baking I should have napped when the kids napped. I hope for this new year to be all about love, joy, indulgence and deliciousness with family and friends and not to mention exciting work assignments and collaborations but also a year where I learn to be better to ‘take a chill pill’ and relaxe when I need to, instead of always feeling behind on the to do lists 🙉☺️✨I hope, that you are having a great January
