Breaded Chicken Roulade with Multicolor Baby Carrot, Carrot Puree, Crispy Potato Galette, Saute Mushroom, and Bordelaise Sauce. [another angle]
I used sous vide machine to cook the chicken roulade (58°C for one hour), then I brush with with Dijon mustard, and cover it with breadcrumb and deep fried at 180°C for 3-5 minutes. The texture is so crunchy in the outside but really smooth and juicy in the inside, very delicious. Recipe:
100 gr chicken breast / leg, minced
10 gr chicken skin, minced
10 gr chicken fat, minced
15 gr bread crumb
15 gr chicken mousse
5 gr garlic, chop & saute
5 gr shallot, chop& saute
5 gr chop parsley, chop
Salt and pepper as needed.
Maybe you will ask about:
1. What is the white thing?
It's chicken mousse.
2. Why do you saute the garlic first?
Because, we can't get the garlic flavor using 58°C temperature.

3. Mungkin juga ada yang nanya:
Kenapa pake chicken mousse? Sebenarnya ga harus, cuman kebetulan aja we ada sisaan abis bikin chicken stuffing, jadi ya gue pake aja daripada dibuang.
Dan mungkin ada yg nanya:
Kenapa chicken mousse nanya kagak rapi?
Well itu karena kedikitan, seandainya gue ada banyak, seharusnya chicken moussenya membentuk lingkaran yang nge-cover si roulade nya. Tapi ya gpp, namanya juga dish random, no plan, cuman manfaatin sisaan bahan yg ada kok😊😊😊 *my grammar is not really good, please correct me if I'm wrong*
