One thing I love about food and cooking is being able to exercise my creative and experimental side in the kitchen. Here’s my first attempt at sweet-potato pancakes 🍠 stacked high strawberries and cream style 🍓 . 👩🏼🍳 HOW TO: - Microwave a potato for 4-5min, carefully remove skin and mash with a fork 🍴 . - Mix in 1 egg, a dash of vanilla essence and a pinch of cinnamon 👌🏻 . - Using 1cal spray pan-fry into rounds, turning halfway for an even cook 💥 . .
I then stacked each layer with Vanilla Quark and sliced fresh strawberries 🍓 and topped with a small dollop of (@meridianfoods) peanut & coconut nut butter 🥜 and finished with a drizzle of (@sweetfreedomuk) choc shot 🍫 . .
