It impacts every move I make, every meal I prepare, every bag I pack, every trip we take, every play date we go on, every restaurant we visit, every toy, every water bottle, and every grain of sand he touches; every breath I take...

Every day is a learning experience. I think we’re doing pretty well. For the most part, we have it under control. But sometimes, on days like today, I just have to remind myself that it’s a journey...and to breathe.

Starting my bulk baking this week for a birthday gathering. Having to address a number of diets and special food plans (SCD, Mito, Keto, Paleo, Gluten Free, Dairy Free, Soy, GMO, Dye, and Peanut Free). Some are on these diets for very specific health conditions and I want to make sure everyone is included with a safe option. It’s no problem! I got my variety of sweeteners and flour options. I’ve got this!

Last week Sophia had a severe allergic reaction to eggs and we ended up in the emergency room. We already knew she was allergic to dairy so her pediatrician recommended we have an allergy panel done so that we would know, without a doubt, what she is allergic to and the severity of each allergen.

We received the results today and Sophia is allergic to dairy, eggs, soy and peanuts. Her doctor is hopeful that she might outgrow the dairy, soy and egg allergies but the peanut allergy is not typically outgrown.
At this point, I am still a little overwhelmed and not sure where to start because all I can think is, "she can never have a PB&J, Reese's, snickers, etc. (AKA all the good Halloween candy!!)" "Where am I going to find a smash cake for her first birthday that does not have any of these allergens?" "She can never have Chick-fil-a". If she doesn't outgrow the other allergies, this list just goes on and on...(like ranch dressing and ice cream, what!?) All things that we don't really need anyway, but are part of childhood!
We now have an EpiPen that goes with her everywhere. There is a huge picture of her on the wall at daycare that reads, "WARNING. SEVERE FOOD ALLERGIES" in bright red print.
This is weird and scary and such a lifestyle change. But, WE GOT THIS!!! If you can't tell by the picture, our girl is strong and fierce!! Bring it on allergies!

Recipe for double choc vegan Oreo muffins. This is one I know off by heart, but here’s my best description: .
Free from dairy, egg and nuts.
🧚‍♂️1.5 cups self raising flour
🧚‍♂️.5 cup of sugar (or more to taste, original recipe calls for 1 cup)
🧚‍♂️ Three or four tablespoons of cocoa

Mix together .
Make three grooves (shallow holes) in the top of the mix .
Into each depression pour:
🧚‍♂️olive oil (a good pour, might be 4-5 tablespoons)
🧚‍♂️ one teaspoon vanilla essence 🧚‍♂️ one teaspoon of white vinegar
.
On top of this mix pour:
🧚‍♂️ one plant based chocolate yogurt little (such as soy or coconut)
🧚‍♂️ .5 cup plant based mylk such as rice milk.
.
Mix together. Pour more rice milk in if required to make a muffin looking batter.
.
Bake at 180C/350F for 20-25min or until a skewer comes out clear
.
Icing! 🍄
🍄 Dairy free dark chocolate such as Whitaker’s 50% 🍄 Olivani or nuttelex spread
Melt together, pour on top.

Top with an Oreo, the plain ones are vegan.

It’s not all cookies and chocolate over here! My kids DO eat fruits and veggies. Ok that’s not entirely accurate. They are ok with fruit but veggies are a tough one. That’s why I’m always looking for ways to change things up. If they can dip we are about 80% they’ll eat up their veggies without me threatening a baby food pouch. My allergy peeps let’s talk dressing. What do you use? This is a difficult one! So quick story. My grandmother may she Rest In Peace lived until she was 96. She was fortunately sharp and healthy until the day she died. She was a healthy 98lbs (a healthy nice figure 98lbs!) and beautiful for as long as I can remember. Back in her day she was asked to be Miss Philadelphia! Anyway you’re probably wondering why I’m telling you this. My grandma ate like only 6 things. She was strictly kosher so she was limited as we allll know too well about that. But one of the few things she ate was @kraft_brand Catalina salad dressing. And by “ate” I mean she used 1/4 tsp on her entire salad lolol. I grew up with this dressing and it will forever be special to me. And oddly enough it’s safe for my daughter and she loves it just like her mama! See this momma. See how tired her eyes are? How sad she looks?

I’d do anything to go back to these days. To not stress about the kids not sleeping. To not worry about the house. To not care that Weston didn’t want to just sit but instead was ready to explore.

I missed so much. SO MUCH. I took so much time getting angry that Ri wouldn’t sleep, and Weston wouldn’t either. I was so exhausted but the anger made that even worse. I should have just rolled with it, let the kids nap with me. Let them snuggle with me, do nothing but spend time together.

I wont ever get those days back and it is something I mourn. So these days, we just go with the flow. I do what I can but when the kids say “momma snuggle me” I drop whatever I am doing and I snuggle them. Weston isn’t a baby anymore and doesn’t look like it either 😭 I am thankful to be passed that hard stage with him but I hate I rushed it. I hate I didn’t let him be little.

So my house won’t always be clean, the laundry takes me 3 days to do one load, I don’t mop as much as I should 🙈 but you know what?
