Am I the only one who's ready for caldo season!?! Here is a healthy recipe for #albondigas
Bring water to boil and add salt (be generous)
Get 2 pounds of extra lean ground beef and mix 1/4 cup of rice and 1/4 cup chopped mint leaves
You will make your balls 😜 and add to boiling water
Get 3 calabazas, 2 potatoes, corn, and small bag of carrots
Chop veggies (except carrots)
Boil albóndigas for 10 minutes and then add all your veggies including all the carrots.
Cover and put on medium heat for 10-15 minutes. Don't cook too long or your veggies will get super soggy and that's no bueno!
Walahhhh you have lunch/dinner ready in less than 30 minutes!!!! Remember the real discipline comes in the kitchen.
