Well, almost... And because I ate my last stack of pancakes so quickly, I have to show you a picture from a few weeks ago- ooops. But what can I say, #theyweretoogood
If you are currently on #aipdiet or a looking for #glutenfree pancake ideas, try this recipe:

2 cups cassava flour
2 cups canned coconut milk
1/2 - 1 cup water
1/4 cup olive oil

The dough will have a different consistency than ordinary pancake dough and you might want to fry the pancakes in a small pan, but once you get the hang of how to fry them, they are super yummy! Experiment a bit with liquid / flour ratio (for tortillas I use more flour and for pancakes I tend to make the dough more liquid). For those of you who like a bit of sweetness: You can also add cinnamon to your dough and serve it with warmed blueberries... 🤪

A little #AIP Carrot-Banana Bread N’oatmeal to start the day (recipe by @grazedandenthused ). Gonna need my energy because we’re going to one of those go kart, arcade, mini golf type places today to celebrate the kids finishing up school. Those places are fun but trying to keep up with a 5 and 8 yr old is HARD!

I call it the Kitchen Sink smoothie. 🤣

Take what you have in fridge and freezer and toss it in. Add a bit of maple syrup to hide the butternut squash taste so it will mix with the watermelon.

Play around until you have a good taste. #superfancy —-
I didn’t like the texture of butternut squash apple pie no-oatmeal after it was frozen, so I put about a third of a cup in here. That was butternut squash, apples, coconut, maple syrup. I added strawberries, blueberries, watermelon, a bit of coconut milk, water, watermelon juice, half a banana, half an avocado,and a handful of spinach. Tastes mostly like watermelon. Sounds gross but tastes good.

AIP day 17, breakfast 😋
Well, I tried AIP baking for the first time yesterday and it didn’t turn out like it should’ve 🙈 I attempted lemon zucchini loaf but I think I screwed up the gelatin egg because it doesn’t stay together! Note the blob on the right hand side of the plate 😂 It was delicious, just not loaf-like in the least!

Turkey sweet potato bites, mixed chard, kale and parsnips and a side of banana strawberry this morning! I keep wanting waffles and coconut porridges, which shows me that I need to get back to a more nutrient breakfast and limit those others to once a week. These little turkey bites fit the bill perfectly, packed with sweet potato and a bit of kale, they’d make a great portable snack! :

Steamed rutabaga / parsnips, “meat loaf” (ground beef, carrot greens, onion, zucchini, tumeric, cinnamon, cumin), and my green sauce I’ve been eating incessantly! I blend steamed greens, usually arugula, spinach, &/or kale with olive oil, lemon, and spices. I love adding butternut or spaghetti squash to the mix to give it a thicker consistency and depth of flavor. Yum! Breakfast every day - steamed veggies and da green sauce with extra cumin💘 collagen tea on the side. .
